Totally Buzzin’

Coming off of yesterday’s LUCKY day, I really wasn’t expecting today to get even BETTER.

But it did.

I would make you scroll to the end of this post to find out why, but I can’t do that to you lovelies.  You have been far too good to a gal for me to turn all sneaky and malicious on y’all.

I got nominated for a Foodbuzz Blog Award!

And I didn’t do anything illegal or against my morals to earn it either!

Back to the eats!

I woke up at 4:30am this morning and could NOT fall back asleep.  Enter in some blog reading and a bowl of glorious Fall Oats by candlelight…

1/2 cup oats
1/3 cup water + 1/3 cup skim milk
1/2 cup sweet potato puree
1 tsp. blackstrap molasses
1 tsp. agave
cinnamon, nutmeg + ginger
1 small box raisins
1 spoonful PB&Co. Mighty Maple PB

Then I hobbled my way the 1 mile walk to work in the rain.  Yes, I am still hobbling. Yes, it felt like the longest walk ever.

Today’s eats were mini-meal style, starting with a camera shy Honeycrisp apple + handful of raw almonds.  Then around 11am, I whipped open a bag of these dudes I got for free at the marathon expo

I am much more a sweets gal than a salty chip fiend, but if you are going to eat the potatoes, cheddar + sour cream is the way to go.

A tupperware of roasted acorn squash, agave + cinnamon, which looks eerily like a really nasty #2…

And a yog mess made with the new Nature Valley Nut Clusters I received this weekend…

1 cup Stonyfield Lowfat Vanilla yog
1 sliced banana
1 sliced kiwi
5 roasted almond granola clusters

The nut clusters are good, and the stats aren’t too shabby either.  I think I got about 5 or 6 clusters for 150 calories, 4 grams of protein, 7 grams of sugar and some carbs thrown in there for good measure.

Dinner, I knew I had to find something to concoct with my new stash of coconut oil.  I present to you an easy peasy coconut curry mound of deliciousness.  That was the best description I could come up with.

I sauteed 1 small onion + 1 large green bell pepper in 1 tbsp. of coconut oil
with a pinch of salt.  I let that do it’s thang for awhile until the veggies were softened.
Then I added 1 tsp. of Madras curry powder, tossed in a huge handful of spinach and mixed well.
While that heated through, I took a
Kashi 7-Grain Pilaf, cooked it in the microwave for 90 seconds
then topped it all with a sprinkle of unsweetened shredded coconut…

Brandi is a genius – dark chocolate + almond butter puppy chow.  Amaze.

Alright, I am still hungry, have some freelance writing to finish, organization to attend to, part-time job scoping (2 rejections already – ugh!), dish washing and most importantly, SLEEP.

    GO HOLLY GO HOLLY GO! I am so excited for you— I voted.. and I would take you to Natty Greens… It is the local brewery here in Greensboro, NC. I’ve never had there beer (21 in march) but I’ve been told it’s TOPS!

    Aside from the beyond brilliant seasonal beer that you’d order is the food and the environment! We’d have to go on a beautiful fall day and sit outside! I’d order the veggie burger or wasabi tuna sandwich!! Delicious!! And we would be tickled at all of the eclectic folks takin a stroll down downtown greensboro!

    I hate not being able to fall asleep. Around here, it’s due to frat parties, but they’ve calmed down since rushing ended.
    I love eating things that other people tell me look like baby food. Baby’s have the good life I’m telling you.

    I really can’t think where I’d take you if you were here. This upmarket pasta restaurant was amazing and totally lived up to its name (http://www.delicious.co.nz/), but for a huge variety of cheap quality food, you can’t beat Food Alley (which is so budg it has no website). I take all my visitors there!

If it was Scotland…a traditional Scottish restaurant. NOT the kind that sells deep fried candy, but things like smoked haddock…..mmmm…one right by my house then you can crash at mine and eat yogurt messes in the morning :D

    That salad looks unreal. And there is NOTHING wrong with being 24 and stealing food from parents. I do it on a weekly basis from my in-laws. I’m sure they love it.

    Some foods it goes great with:
    - Mango
    - Light fish
    - Cilantro
    - Wheat bread
    - Lemon

    I put it into omelets and stir fries. It’s very good because it has a high smoke point.

    If you visited me (which would be SOOO cool) I’d have to take you to my college stomping grounds for a food festivus! We’d start at The Earth (hippie deliciousness) then hit up Thai Raja (best Thai EVER) and end with Victoria’s (most amazing homemade pasta). You’d be full, but then we’d go dancing and empty out :)

    Hmmm…I would have said The Bank which was my favorite place here, but they just got new chefs and I haven’t check it out yet!

    Of course, if you were coming in october, we would go to Oktoberfest at Mountain Lake (where Dirty Dancing was filmed!). It’s 15 minutes from my house and they have this huge German feast with lots of beer, pretzels, and an Oompa Band. Fun.

    Hmm.. where would I take you? Probably this place called Cous Cous. It’s Mediterranean and Moroccan cuisine and you can order things tapas style. Their menu seems pretty eclectic and the food I’ve tried is all delicious! Hello manchego cheese fritters with a mango coulis! And crispy eggplant with apricot and pine nuts! Not to mention the environment is awesome – you get transported into another world and it’s not cheesy at all.

    I’d love to go out to dinner with you in NYC! One of my fav places is a coal-oven pizzeria called Grimaldi’s located under the Brooklyn Bridge. Thin and crispy pizza topped with fresh mozzarella and Italian tomatoes. Best paired with ice cold diet coke, mmm.

    It is a very good and healthy restaurant where they boost that every dish they serve is under 475 calories!!! Their mini-deserts are amazing and they always have TONS of fresh in season veggies that are to die for, better then meat and for me to say that you know they are GOOD!
