For the Record

For the record, here’s what 17 inches of snow looks like…

And for the record, there was two trees down in my driveway that fell from the weight of 17 inches of snow.  Also, that is my car in the bottom right picture on the bottom.  FML.

Practically EVERYTHING was shut down or closed yesterday.  Since I walk to work however, I couldn’t quite justify not going in for at least a little bit.  So, I pulled on my Uggs, bundled up and walked the mile to work.  It took me 45 minutes, including a stop for coffee at the only place open - Starbucks.  Needless to say, it was a venti kind of day.

This morning, I awoke to -12 degrees and a steamy bowl of Pumpkin Oatmeal

1/3 cup oats
1/3 cup water + 1/3 cup organic skim milk
pinch salt
1/3 cup canned pumpkin
drizzle of Xagave
cinnamon, nutmeg + ginger
Bekah’s Coconut Chia granola
sprinkle of coconut
almond buttah

For the record, pumpkin + coconut make quite a tasty pair.

It took me a good hour to completely thaw out from the walk this morning, because I was the picture of idiocracy and wore tights today.  Why I thought I could somehow defy logic and mother nature is beyond me.  In addition, I also thought it smart to carry three packages I needed to mail out.  Tights + carrying three boxes + -12 degrees = IDIOCRACY. For the record.

Lunch was a classic combo of kiddie favorites…

For the record, yes, those are yellow carrots.

Snacktime was supposed to be almonds, but Natalie brought in her uber-delicious puppy chow.  For the record, I consumed this amount multiplied by two three.

The clusters that are stuck together are the best, for the record.

After work, I skedaddled to the gym for what was supposed to be a cardio + yoga sesh.  I worked it out for 40 minutes on the elliptical doing intervals, and then headed to a 6:30pm Powerflow Yoga class.  For the record, Karen the teacher decided to get sick and cancel class.  Annoyed.

When I got home, I heated up a DELICIOUS dinner of vegan chili-filled kabocha squash with a sprinkle of this lovely…

Then…drumroll please…I couldn’t resist a few bites of perhaps the best ice cream ever

Those ingredients!  That taste!  The creaminess!  The deliciousness!  Those coffee specks!

And for the record, I’m not even a fan of coffee ice cream.  Consider me converted.  I don’t know if I will ever buy non-Coconut Bliss ice cream again.  It’s that dayum good.

For the record, I am about to go take a bath and then watch last night’s Glee, which I have been impatiently waiting to watch ALL DAY.  Then I have to redo some freelance writing, because I made a stupid mistake and need to fix some things.  Then, I  need to call it a night, because I’m exhausted – for the record.

    Ha! You and I had the same morning! I ate pumpkin & butternut squash with pumpkin pie spice, olive oil, cumin & parsley… as well as an egg… BUT NOT ONLY THAT… it was also negative 13 or so here! ha ha! Where do you live, I’m in Colorado?!

    We only got about 6 inches in the New Berlin/West Allis area – and that was a lot to scrape off my car because it was so heavy. I can’t imagine 17! Gross. Good luck surviving the cold.

    I’m in a craptastic mood from this crazy crappy weather. I can’t decide what my least favorite part of the day was. Hanging at the Great Dane downtown with co-workers playing shuffleboard and not getting paid since I’m a contractor. Or driving to woodmans and joanns only to learn that they didn’t have what I needed (only took 1 hour to get from one to the other). Perhaps it was taking my kids to swimming lesson in a cold pool and dragging them home in below 0 degree weather.

    It’s going to be a LONNNNG winter :(

    Oh my godddd just tried the Coconut Bliss Dark Chocolate tonight, a man a whole foods gave me a whole pint for FREE, not sure why but he did! And its AMAZING! Too bad for the crazy price, but I have a feeling this thing will last me a while its soooo rich. Im in love and may never go back to regular ice cream!

    cant believe you have SO much snow! sucks that your yoga instructor cancelled since you’d already trekked out there. at least you had tasty oats and fabu ice cream to enjoy :)

    Puppy chow????!!!!!! I haven’t had that in for-freaking-ever and now I want it. Like, I’m contemplating running to the store to buy the supplies (I probably won’t because I’m lazy and like every good 24 year old that is also secretly an old woman 9pm is definitely getting close to my bedtime)

    Aahhh, I do not want winter to look like that here this year!! I used to like the snow, until I bought my car. Now my winters are filled with shoveling, driving into snowbanks, and getting snow in the cuffs of my jacket as I clean my car off :(

    Yellow carrots!? I wonder if they’d still turn you orange?

    I’ve been looking for coconut ice cream forEVER! I don’t like regular ice cream because I don’t like cream, but I have a feeling I’d loooove the coconut stuff.

    You know what I wear for tights when it’s cold? UnderArmor! They’re thick and keep my legs nice and toasty. And aren’t tight around the waist ;-)

    I know it probably wasn’t but walking to work in the snow and grabbing starbucks along the way sounds fun!! I wish I could have walked with you!!

    Of course, only a ridiculous corporation like Starbucks would open in a blizzard!!
