a 5-minute meal

in dinner,healthy tips

Let’s be real, we’re ALL busy.

You. Me. Everyone. I only wish I could say I was busy shagging Jake Gyllenhaal…c’est la vie.

But alas, that is not true. My busyness is more like a quick shower, slap on a layer of haphazard make-up, work full-time during the day, exercise, make dinner, blog, work on freelance projects, watch some Netflix, putz around the apartment, clean my sinkful of dishes and eek out 8 hours of sleep. And that’s all on a good day.

Most days, it’s oversleep, put on the first semi-coordinating outfit I grab from my closet, wash my face, work, get only the freelance work done that absolutely NEEDS to be done that day, watch episodes of Gavin + Stacey (even though I really have no time to do so), fall asleep on the couch, wake-up at 1:30am in my work clothes and curse myself for not actually getting anything done that I needed to get done.

On those crazy days, I need a meal that comes together in less than 5 minutes.

My easy go-to dinner?

Toast two slices of Ezekiel bread (<- sprouted bread = easier to digest).

Spread on a generous slather of full-fat cream cheese.

Top with slices of colorful heirloom tomatoes.

And sprinkle of herbed sea salt.

All that = 5 minutes.

Rachael Ray ain’t got nothing on me.

YOUR turn! Your best 5-minute meal…and go! Don’t forget, sharing is caring!

COOKIE DOUGH BOWLLLL

Molly September 20, 2011 at 10:39 pm

that looks delicious!
5 minute meal: chocolate chips + almond butter. Delicious!

I found myself ‘going to’ something similar this summer.
My version involved artisan Traveling Grain (handmade sprouted grains box bread) from a local bakery (my favorite part) and avocado (my full fat dairy free (vegan) alternative) with fresh herbs and cracked pepper.
This reminds me. I really need to go back to that… :)

Poke a sweet potato a couple times with a fork, pop in the microwave for 4 minutes. While that’s cooking, grab some loose leaf prewashed greens (the kind in the tray box), assorted nuts, maybe some tomatoes, and dressing. 5 minutes and healthy as all get-out.

Sana September 20, 2011 at 11:10 pm

It takes me 5 mins to roll out of bed, and drive to BK. SIKEEEE. Pb+hotsauce+soy sauce+ramen.
Doneee!

Linda September 20, 2011 at 11:25 pm

LOL!! :D Yes, crazy busy!!! I feel your pain! My class is winding down (thank goodness!), but now I have been approached to work on a project that is going to take up a majority of my free time over the next year. I am SO excited about it though!! :D
Thank you for the YUMMY recipe! I have a feeling this is going to be my dinner A LOT!
My favorite 5-minute dinner is usually a bowl of cereal. :) Yummy and quick and easy clean up!

pb and j on a waffle

Erica September 21, 2011 at 2:16 am

Sounds delicious. I do hummus, pre chopped veggies and pretzels

Emma September 21, 2011 at 4:55 am

Yup. Oatmeal is fast and also my favorite. I would looove to work from home! It’s not working that bothers me, it’s having to be somewhere and look presentable every day. What a chore.

Megan (The Runner's Kitchen) September 21, 2011 at 5:33 am

My 5 minute (okay, maybe 3 minute….) meal is very similar although I go a slightly less healthy route and top toast with mayo, tomato slices, and bacon. Mmmm. Cous cous mixed with hummus and chopped veggies is also a quick favorite of mine!

Amy B @ Second City Randomness September 21, 2011 at 6:10 am

Grab box of cereal. Open box. Start to eat.

Not only did I make it in less than 5 minutes, I can also consume a good portion of the box in the same time slot. Holla’.

Madeline - Greens and Jeans September 21, 2011 at 6:24 am

peanut butter plus eggos topped with a banana. BOOM

Jessica @ Stylish Stealthy and Healthy September 21, 2011 at 8:15 am

This is one of my favorite summer lunches, except I use mayo instead of cream cheese. It’s the only time I really put mayo on anything, normally it’s not my favorite.
But the key is generous shakes of salt & pepper and a reaaaally good homegrown tomato.
My favorite 5 minute or less meal is a stir-fry with frozen veggies and broccoli slaw, topped with pre-made Mmm Sauace. Slammin.

Sami September 21, 2011 at 8:30 am

literally ALL my meals are 5 minute ones. eggs + hot sauce. smashed beans + avocado. tomato + cheese. sweet potato + pb. jam + cheese. you name it, i’ll eat it on bread (:

Sami September 21, 2011 at 8:31 am

also soup. canned, boxed, whatever. it’s perfect.

Maren September 21, 2011 at 8:50 am

Bowl of cereal girl. Can’t get any easier. or healthier, really.

Evan Thomas September 21, 2011 at 8:59 am

I’m becoming a fan of the tempeh + barbecue sauce combination over whatever vegetables I have lying around to microwave.

brandi September 21, 2011 at 9:01 am

yes, please to your 5 minute meal!

my favorite quick meal right now: toasted ezekiel cinnamon raisin muffin with a pat of butter and 1-2 eggs, cooked in the poke-spread method OR hard boiled if I’ve made them earlier. plus a piece of fruit or salad.

PS: did you ever end up watching half nelson? we’ve thought about renting it, but haven’t heard how it was

PPS: i’m emailing you today with details of the schedule! hold me to it!!! work has been insane, and i’m way behind on emails.

Liz @ IHeartVegetables September 21, 2011 at 9:02 am

Sweet potato + almond butter + cinnamon and stevia. Made in the microwave of course ;)

Erica Dagley September 21, 2011 at 9:46 am

Egg, toast, salsa and tomato sandwich! any time of day.

Amy September 21, 2011 at 10:50 am

My go-to 5 minute meal is a slice of toast with half of a mashed avocado, topped with tomato slices and swiss cheese, then toasted in the toaster oven. I use mustard with it, too.

I also like to toast bread, spread hummus on top, top w/tomato slices and swiss cheese. Toasted. I call it cheesy hummus toast.

Amy September 21, 2011 at 10:51 am

I also am big about toast topped with peanut butter and sliced bananas.

Katie September 21, 2011 at 11:28 am

Ugh, my life has been so jam packed these last few days, I feel like I don’t even have time to breathe (although, obviously, that’s an exaggeration because I’m still alive).

I like frozen vegetables cooked in the microwave with hummus, nuts, salad dressing…whatever….and some toast. Mmm.

Lindsay @ Lindsay's List September 21, 2011 at 11:51 am

Two eggs, cracked into a bowl. Microwave for 2 minutes. Top with cheese and plain chobani. Piece of toast on the side.

natalie (the sweets life) September 21, 2011 at 12:29 pm

sweet potato hash is our go to meal when we have no time…just made it last night! it takes a few more than 5 minutes but not much! chop up sweet potatoes, saute/steam on the stove until tender (can also saute with onion)…add bacon bits if desired…or spinach or kale or whatever else…serve topped with a fried egg. DELISH!

Diana @ frontyardfoodie September 21, 2011 at 1:19 pm

Mmmmmm that like the best food ever. SO good.

I like anything that takes only five minutes to be honest.

emily (a nutritionist eats) September 21, 2011 at 1:23 pm

Perfect summer meal!!
I think mine is cheese and crackers. Not quite as balanced as yours… :)

Megan (Braise the Roof) September 21, 2011 at 4:22 pm

I enjoy our mutual intense love of Ezekial bread. So key. In fact, we all know that I have about 3 minutes to make breakfast and take it to work with me, and lately (because I think I need to switch up the PB+Ezekial bread combo occasionally) I’ve been cracking an egg into a bowl, breaking the yolk, microwaving it for 35 seconds (precisely), then slapping it on a piece of Ezekial bread with a slice of cheddar and calling it good. Fastest egg sandwich ever.

Kristen September 21, 2011 at 5:05 pm

Scrambled egg sandwich with spinach, tomato, Laughing Cow cheese wedge, and a smear of jelly. Or a yogurt bowl with almonds, about 1/4 cup of cereal, and some fruit. Mmm mmm!

Hillary September 21, 2011 at 5:17 pm

My life has quite literally never been more busy than it is right now. That being said, I’m eating LOTS of these meals lately. I’ve had PB + raspberry jam + banana on honey wheat flatbread this entire week. And lots and lots of sweet potatoes (because they can be microwaved in five minutes, sprinkled with cinnamon, and then shoved in my face. Classy).

Emily September 21, 2011 at 5:29 pm

I love that you love Gavin & Stacey! I spent a large amount of time in my first year at uni watching it. So, so funny. Nessa is my favourite person ever!
I love the combination of cream cheese and tomatoes – and might be eating it right this very moment… The other day I made a very good five minute meal, I had butter bean and tomato soup (from a tin unfortunately) and mashed avocado and tomato on a bagel.

Allie September 21, 2011 at 6:06 pm

(assuming you already have some prepared brown rice in the fridge, which I usually do):
-put brown rice in bowl
-drain/rinse black beans – put in bowl
-throw in frozen corn
-top generously with salsa
-microwave
Done!

A good bowl of savory oats with an over-medium egg also does the trick.

I read this post this morning when I should have been studying for a test I have today and laughed out loud at your “shagging Jake” line… you crack me up! My dinner last night? A couple spoonfuls of rice before heading to my computer to study some more :) Now, off to get more coffee and walk my dog! Have a great day, dear :)

Kristen - Anywhere There's An Airport September 22, 2011 at 12:54 pm

bag of carrots + jar of tahini. (do I win for most random?) you said meal. Not balanced meal. :) I have no idea why this tastes so good to me.

Tamar September 22, 2011 at 3:01 pm

I was going to give a recipe for a bowl a cereal, but I see that joke has already been taken. :) My five-minute meals are always either smoothies or lazy tuna melts: slice of bread, spinach, a little good quality canned tuna, cheddar cheese, stick in the toaster oven until the cheese melts. Serve with seltzer. So gourmet.

Andrea@WellnessNotes September 22, 2011 at 4:18 pm

Your 5-minute meal sounds perfect! One of my favorite quick meals is avocado on sprouted bread with tomato. I know, it’s almost the same, but I have to eat tomatoes every day right now as long as they are still in season… I also like leftover brown rice, seasoned with a little soy sauce, sesame oil, chili paste, ketchup, and sesame seeds and topped with a couple over easy eggs. And tomatoes on the side, of course! :)

Amanda September 22, 2011 at 7:24 pm

I wish I was busy with Jake too. Sigh. Or Ryan Reynolds. Whatev.

5 minute meal fave? romaine lettuce, avocado, carrots, tomatoes, cheddar cheese and rice all mixed up into a huge salad. So easy. Or toast with butter and avocado. Obsessed.
