Good evening everyone!
I don’t know about you, but this gal is still recovering from the weekend. I have been yawning like crazy all day! After a crazy wedding/half marathon/Madison road trip weekend, I’ve decided to dedicate the rest of this week to going back to basics. With all the festivities of the past couple weeks, my eating has been here, there and everywhere (including lots of dessert :))! So this week, I am hoping to keep it simple, easy and basic.
I started out the dreary, cloudy morning with a classic bowl of oatmeal…
1/3 cup rolled oats + 1 tbsp. oat bran
1 mashed banana
LOTS of cinnamon
1 HEAPING tbsp. raw almond butter
Along with a special Monday treat (coffee + 2% milk) to keep me awake…
Unfortunately, the coffee did not do its job today…there was just no saving me! For lunch I delved into a delicious yogurt parfait (mango, nectarine, nonfat Fage Greek yogurt + blueberry muesli) along with one of my new Heart Thrive Chocolate vegan energy bars. Topped off with a cup of mint tea, loved it! Tea + muesli reminds me of my favorite place in the world: LONDON! Gosh, I want a British accent so bad…
While at work, I usually like to have a couple small things to snack on throughout the afternoon. I find that if I don’t keep healthy snacks around (especially between 3-4pm: “The Witching Hour”), I make a mad dash right for the peanut M&Ms! Three hours or so after lunch, I dug into this marvelous combo: carrots + raw almond butter.
Several hours later, I munched on a yummy honey + oats granola bar, along with a TJ’s apricot fruit leather. Both snacks had the right amount of carbohydrates and protein to hold me over…and they tasted fabulous. Seriously though, if you haven’t tried carrots + almond butter (or any kind of nut butter!), please do. It’s really quite tasty!
When I got home from work, I immediately set to work in the kitchen concocting this monster of a Mexican-inspired junk salad. It literally took me maybe five minutes – start to finish…here I go…
2 handfuls baby spinach
1/4 cup diced tomato
1/6 cup diced onion
1/4 cup sliced green pepper
1/2 cup black beans
1/2 small avocado
1/4 cup jarred mild salsa
dollop of Greek yogurt
sprinkle of fresh cilantro
LIGHT drizzle EVOO
LIGHT drizzle of honey
2 tsp. lime juice
…and voila, messy deliciousness on a plate!
This is honestly one of my favorite salad concoctions! It’s got a bit of everything, which I love. After dinner, I took three bright, ruby red strawberries and lovingly dipped them in Cool Whip. The perfect ending to a perfect dinner :).
Now, I am going to rest my still 1/2 marathon weary legs, finish my cuppa coconut chai tea (decaf thankfully!) and hit the sack. Even though I say this a lot, I am really motivated to get up for a 5:30am Vinyasa flow yoga class with my favorite instructor ever, Deb, so I gots to get to bed early!
