Where did I leave off again?

Ahhh, yes! Me + Madeline + 10-mile run + farmer’s market, which went a lil’ something like this…

In case my memo pad sketch isn’t making much sense, I awoke Saturday morning at 6:58am, picked up Madeline from her hotel, drove back downtown, started running, picked up Kristie at mile 2, ran a total of 10 miles, ended at the farmer’s market, ate a cinnamon oatmeal scone + apple, came home, dropped Madeline back off and then proceeded to chug a cup of black coffee + LOTS of water.

Did I mention Madeline is going to move into my apartment, sleep on my yoga mat and become my new roomie?

It’s going to happen…someday.

Anyways, after a long shower and hour of pampering (think moisturizing, mini pedicure, hair styling and other girly things of that nature), I was ready for lunch. Thankfully, Madeline let me mooch have the rest of her salad from our dinner out at The Old Fashioned on Friday night…

Mixed greens, pickled beets, blue cheese, toasted walnuts…it was delish.

However, it needed to be supplemented post-10 miles with a bit more. How’s about a PROJECT CLEANOUT-esque bowl of overnight oats?

1/2 cup rolled oats
1/2 cup vanilla Greek yogurt
1/4 cup water + 1/4 cup POM juice
1 crumbled Dark Chocolate Muffin

Let the first four ingredients soak overnight; add the muffin in the morning; and devour a cool, luscious bowl of creamy overnight oats. Simple as that.

My weekend got even better with a very special delivery from Tom and the lovely people over at Schwan‘s! You see…Schwan’s is an online grocery store and food delivery service I am very familiar with. Growing up in Minnesota, you would often see the Schwan’s Man in his yellowish-khaki truck delivering food (and ice cream!) to houses. In fact, I always secretly wished Mama + Daddy Everythingtarian would order from the Schwan’s Man. They didn’t.

I digress.

Anyways, Schwan’s has a new line of LiveSmart products with less fat, lower amounts of sodium, fewer calories and no trans fat. They offered to send me some samples to review for the blog. I said, “Hey! Why not?” Let’s test these babies out and see how they stand up to The Healthy Everythingtarian!

You will definitely be seeing some Mediterranean Vegetable Couscous on the blog this week…

…as well as some single-serving cups of Apple Blueberry Cobbler

…and finally (if they last longer than two days), some Peach Vanilla Frozen Yogurt Bars!

I lied.

I’ve already had two of the froyo bars.

And they were good. Really good. Like a creamsicle…but peachy instead of orangey.

They don’t have the cleanest list of ingredients, but for a low-cal, summertime treat, I’ll take it.

Plus, this blog is about balance – NOT eating perfect all the time. I don’t need that pressure. Actually, NONE of us need that pressure.

For dinner, I turned to my girl Terry Walters. If you don’t know who that is, she is the author of the cookbook CLEAN FOOD. And she’s a genius.

These Millet Black Bean Patties with Corn? Genius.

Served alongside kale chips and a slice of Ezekiel toast + butter, dinner was GENIUS. I seriously have no other words to describe this woman, her cookbook and the food that results from it.

Genius. I stand by my statement.

This morning, I awoke with Millet Black Bean Patties with Corn still on the brain, which resulted in a breakfast of truly delicious proportions…

The strawberries were tasty, but the REAL star of the show was that breakfast egg stack, which included (from bottom to top):

  • 1 slice Ezekiel toast
  • small handful of spinach
  • 2 T salsa
  • 1 Millet Black Bean Patty (see above)
  • 1 perfectly cooked egg

Seriously, I told you I am obsessed with runny yokes these days…

I’m still thinking about breakfast.

And the fact that I didn’t have a scone from Lazy Jane’s (maker of the BEST in the world) this morning when I met up with Kristie for some coffee + girl chat.

While I was full from breakfast, the REAL reason I skipped the scone (bestill my heart) was because in truth, there has been a bit too much indulging lately. With the 1/2 Mary exactly one week from today, yours truly is going to clean up her eating, focus on those fruits + veggies and restore a bit of balance before the big race (and hopefully, continuing beyond).

That’s not to say I won’t still be eating those froyo bars.

I mean it IS supposed to be 90 degrees and sunny today.

Yes, in Wisconsin.

Would I be a hypocrite if I told you I was eating one right now?

Balance, people.

Yay for a productive, beautified day! I’m working on the balance too like not eating the entire gluten free muffins that I just made! It is hard sometimes though! I’m craving bread (real bread) badly, but I know it will make me sick! Have a great rest of your weekend!

What a fun weekend you’re having. Great run and I always love a trip to the farmers market. Those patties look amazing. Black bean and corn go so well together. I got some of those meals too- I’m excited to try them. I enjoy balance as well….except for coffee …that I go overboard on

I was just tweeting about whether or not peach ice cream/fro-yo existed…such a random craving, but I want one of those bars. Think it would make it here without defrosting? My guess is no. Send me a patty instead! Those look amazing!

OMG Those look amazing!

Never feel like you have to defend your food choices. I am so guilty of writing things like “not the best list of ingredients but it’s vegan” and then I realize, even if I was eating dog food laced with HFCS that it shouldnt matter. But readers can get their undies up in a bunch, oh, do I know :)

Anyway girl, so happy you and Madeline hit it off…love her!

And oh, the burgers. Nice. Work. Love the chunky beans and visible corn. I hate pulverized food!

Fine, be healthy. Actually, I really need to A) cut back on my habit of eating a large bag of chips in one day on the weekends, B) clean it up a bit and C) clean out my fridge and cabinets.

I love how you casually mention that you ran 10 mile. Yea, NO BIG DEAL. You’s a boss.

true fact: when i saw the bean cakes my first thought was, “damn those could make some serious eggs benny.” Next thing I know homegirls ploppin a farm freshy right on top as if i called her up right then and there. Only, I would have doused it in some hollandaise or somethin-you know-just to P. Deanize the gem and hide anything remotely “clean” about the dish-or my name ain’t lilpauladean, y’hear?

I completely agree with your philosophy about food balance — nothing is off limits and everything in moderation.

I LOVE your dinner! The Millet Black Bean Patties with Corn look AMAZING. And I haven’t made kale chips in forever; not sure why… I love runny eggs! And I think a froyo bar fits perfectly into a healthy diet! :)

I have always been curious about Schwanns but never wanted to do a commitment without sampling. I’m definitely going to be checking back to see how you like them and really, really am grateful to see their products somewhere

Everything!! I want EVERYTHING you ate yesterday. Those little corn patties look/sound like heaven…and paired with a runny egg, spinach and toast…I die. Glad you had such a fantastic day – way to go on the 10 miles – that is my PERFECT long distance run, I always feel stellar afterward. Ending up at a farmer’s market couldn’t have been bad either…

OH MY there is so so so much goodness going on here! i miss overnight oats so bad! i am on antibiotics and cannot have any dairy with breakfast because the calcium inhibits the absorption or something crazy like that and I have to take them before breakfast! BOO but only 3 more days then back to overnight oats!!!

black bean patties look SO good! my roomate makes her own veggie burgers all the time and I am so intrigued! i have yet to try to do it myself!!

i LOVE anything in bar form, especially in the summer time!!!

Yesyesyes! It’s ALL about the balance ;) It’s why I’m having a really hard time cutting out refined sugar this month. I hate having an “all or nothing” attitude. What’s wrong with a little fun in our diets sometimes? I’m trying to be good in preparation for some serious hamburger eating in Banff. It’s not going that well though. My mom is too good of a cook.

And that’s a great idea with the POM overnight oats! I just got a case of POM and I’m trying to think of cool recipes to try with it, so I’ll definitely have to include it in overnight oats- thanks!!
