This is the first time I have been behind a computer in 72 hours.
And it feels fabulous.
If you haven’t had a technology detox in awhile, I recommend it. Instead of slaving away behind the computer screen this weekend, I went home to visit the Everythingtarian family, which included plopping my butt on the couch in front of the TV. An America’s Next Top Model marathon, Miss America pageant and What Not to Wear mini-marathon later, I feel completely rejuvenated.
Maybe that isn’t technically a “technology detox” but who cares?
So, to recap these past three days, I will now bestow some “Best of…” awards on my weekend…
A creation by my girl Jess, this mixture contains applesauce + 1 tbsp. almond butter warmed up in the microwave for 60 seconds. Then, I took a couple graham crackers and crushed them over the top. Garnished with carob chips, this is warm, melty deliciousness in a bowl.
Mixed Greens Salad with balsamic vinaigrette
Prosciutto , mozzarella & basil, grilled eggplant, fresh tomato with olive oil, roasted garlic & sweet onion
New York Cheesecake
Served with blueberry cassis sauce
MOST RANDOM MEAL
That would be: Buffalo Wing Pretzel Crisps, cheese stick, coconut M&Ms (!!!) and a Naked Superfood juice. Totally random, but oh so delicious.
BEST OATMEAL BOWL
Apple Cinnamon Oats are seriously no-fail.
1/2 cup oats
1/2 cup water + 1/2 cup organic skim milk
1/4 cup egg whites
1 apple (baked for 1 minute w/ brown sugar + cinnamon)
drizzle of agave
dollop o’ PB
When I go home, I am usually lucky enough to eat salmon! I don’t buy it myself (I’m too cheap), but Mama + Daddy Everythingtarian will buy it so I can enjoy this nutritious, delicious fish. Alongside some roasted veggies, garlic bread + cottage cheese, this dinner was obviously a winner!
Per Mama Everythingtarian’s request, I whipped up a batch of Kath’s Whole Wheat Yogurt Pancakes. Instead of 1 cup yogurt, I subbed a Blueberry Chobani Greek yog + 1/4 cup blackberry applesauce. I also added LOTS of cinnamon + some blueberries to make it look purty.
It’s a tie! It is either the AWESOME Dave Farmar 60-minute yoga podcast Mama + I did this morning….or on Saturday (after a five day workout hiatus), I hit the gym with Mama + Sissy for a two-hour workout (there was a showing of our house). It looked a lil’ something like this…
Two-mile run (@ 9:00/mile) with 5-minute cooldown
20 minutes of incline walking (@ 15% incline, 3.2 mph) with 5-minute cooldown
Toning exercises (repeat 3x)
20 one-legged squats (10 on each foot)
20 squats + 8 lb. ball ab rotation (10 each direction) – I know this doesn’t make sense, but I can’t describe it :)
30 crunches on a stability ball
30 seconds of jumping jacks
20 minutes elliptical (intervals: level 12)
20 minutes of stretching
LEFTOVAS! Salmon salad (mixed greens, salmon, roasted veg, dried berries, nuts, cottage cheese + balsamic vinaigrette) alongside several handfuls of these new tasty chips…
MOST NUTRITIOUS DESSERT
1 scoop vanilla whey protein powder
1.5 tbsp. water
1/2 tbsp. peanut butter
1 tbsp. M&Ms
That’s it my dears.
I am back in Madtown, going to finish up blogging and prepare for the week…which includes me leaving on Wednesday to go visit one of my best friends Megan in Charlotte, NC!!! It may or may not involve a meet-up with this lady too and any other Charlotte bloggies + readers who are interested!
