Chocolate PB Chip Cupcakes + Peanut Butter Buttercream

Whether you’re celebrating two years of blogging, honoring the Easter holiday or just enjoying a lazy Sunday afternoon at home, there is always a reason for cupcakes.

And if you can’t think of a reason to make cupcakes, you should probably just invent one.

Like, if you watched 5 hours of Saturday’s America’s Next Top Model marathon on TV, CUPCAKES!

If you spent $50.20 on groceries at the store and have no food to show for it, CUPCAKES!

If you have a busy calendar of plans for every night this week other than tonight, CUPCAKES!

Or, if you make it into work on time tomorrow morning, CUPCAKES!

See? Always a reason.

This is a fun game.

I encourage you to play along and invent some of your own.

And if in doing so, you decide that there is no other choice in life but to make these Chocolate PB Chip Cupcakes + Peanut Butter Buttercream, then I fully support that reason too.

Because how can you say no to a heavenly swath of peanut butter buttercream atop a light {not-too-rich + not-too-chocolatey} cupcake?

Well…you can’t.

In fact, I won’t let you.

So go and make these.

I am pretty sure “celebrating the deliciousness that is peanut butter buttercream” is perhaps the best reason of them all.

Chocolate PB Chip Cupcakes with Peanut Butter Buttercream

1 1/4 cup flour*
1/2 cup cocoa powder
2 t baking powder
1/2 t baking soda
1/2 t salt
1/2 cup sugar
1/4 cup brown sugar
1 egg
1 t vanilla extract
1 cup milk
1/2 cup butter, melted
1 cup peanut butter chips
1 stick (8 T) butter, softened
3/4 cup powdered sugar
3/4 cup peanut butter
1/4 cup mini chocolate chips, for garnish (optional)

*I used a 50/50 whole wheat + white flour blend

Preheat the oven to 350 degrees.

In a medium bowl, sift together flour, cocoa powder, powder, soda and salt. Set aside.

In a large bowl, beat together sugars, egg and vanilla extract. Add in milk and mix until just combined. Alternate adding in dry ingredients and melted butter until batter is smooth. With a spatula, fold in the peanut butter chips. Pour batter into muffin-lined tins, and bake for 20 minutes or until toothpick comes out clean.

While cupcakes are baking, beat butter, powdered sugar and peanut butter until smooth (makes one cup of frosting).

When cupcakes are cooled, frost each cupcake with 1 – 2 tablespoons of frosting. Sprinkle with mini chocolate chips and devour!

Makes 1 dozen cupcakes

Oh my yum. These remind me of the cupcake you got from Georgetown Cupcakes, except the cooking time was probably shorter than the wait.

p.s. how do you make your photo collages, i.e. the last pic? I can do it in Adobe Lightroom 3 but it takes me awhile…just wondering what editing software you use b/c I know you have a Mac. I got LR3 about a month ago and LOVE it but I am still not uber fast on it :)

(Because dessert is obviously necessary after such a well-rounded dinner.)
