Crabby Bean

First things first…I need to thank everyone for their wonderfully heartwarming feedback on my last post regarding perfection + negativity!  I always get nervous posting personal things like that, because I am much more of a private person. So, thank you for your responses, love and comments! Ya truly know how to flatter a gal :).

After working for 6 hours last night, I woke up this morning and felt like I had been run over by a train.

I was tired.

I overslept.

I was crabby.

And I was sore from a 60-minute Dave Farmar podcast I did yesterday.

What does a girl do? Enter in perhaps one of my top ten creations ever…Pumpkin Spice Latte Oatmeal!

1/3 cup oats
1/3 cup water + 1/3 cup organic skim milk
pinch of salt
1/3 cup canned pumpkin
drizzle of Xagave
cinnamon, nutmeg + ginger
1/3 cup Coconut Bliss Cappuccino ice cream


This mix of textures…of hot and cold…of sweetness and more sweetness…HEAVEN, I do declare!

It took me a bit of time to warm up this morning, but I eventually got working.  I started getting crabby hungry at about 11:30am so I busted out the last of my Easy Vegan Chili.  Don’t fret!  I have a feeling more Easy Vegan Chili will be made very soon…



Dipping the chili in salt + vinegar PopChips then finishing up lunch with an English Currant Tart (x2…courtesy of a cookie exchange!) was probably one of the best decisions I made all day.

If I was Mother Nature however, I would NOT consider this a good decision…


Really Mother Nature…17 inches wasn’t enough for you last week?  (TWSS).

Snackage occurred sometime around 3:30pm…


That would be three clementines and perhaps the best trail mix I have ever had, courtesy of the kind, lovely Experimentarian herself, Emily!  White chocolate chips, milk chocolate chips, almonds, sunflower seeds, dried cranberries + dried apples…

After work, I had planned a visit to the gym, but then I took a look at my to-do list.  Gah, that was a bad idea.

A freelance writing project due Wednesday, working at the PT job Tuesday + Wednesday + Friday, finishing Christmas shopping and some other thangs…then I am heading to MN this weekend because my sister graduates from college! my dad’s side of the family is having Christmas on Sunday! and I am having a birthday breakfast bunch with my besties on Sunday!

Yes, in exactly one week, I will be 25 years old. In the words of Jessica Simpson, “I am halfway to 30.”

Dinner was Gourmet Rice and Beans…meaning rice + beans topped with cranberry chipotle cheddar cheese and Bekah’s cumin/cinnamon/maple almonds.  Twas’ the perfect blend of savory, sweet and spicayyyyy!


And something funky is going on because this picture wouldn’t fully load.  I’m going to call it artistic :).

Alright, I am at the coffee shop now, already paid in advance for a refill and am determined to get this freelance writing done tonight!  Here I go…

Oooh fun oatmeal combo! Do you make your oatmeal extra hot to compensate for the cold ice cream?

Yay for trail mix!!!! And to answer your question, yes I did make it myself. Those dried apples are from our apple tree :) I love the idea of your rice and beans even though I can’t see the pic. Love ya girl! I will catch up soon! xoxo

ICE CREAM IN OATS!? ok seriously i love you! that is maybe the best oatmeal creation I have seen in blogland recently… props to you. such a bold move i love it!
