Easy Avocado Dressing

You know your mama was right when she said don’t judge a book by its cover, don’t you?

Because it’s true…especially when it comes to food! There’s a good chance you’re looking at the photo below with your head ever-so-slightly cocked to one side and the corners of your mouth pursed as you debate what exactly this green cup of goop could be. A new variant of pink slime? An all-natural pore-unclogging face mask? Ummm…baby throw-up?

But it’s not! It’s tangy, creamy, I-want-to-eat-this-straight-up-with-a-spoon avocado dressing.

And it’s kinda perfect.

Lately, I’ve been making a conscious effort to simplify. Because life can be pretty insane and like this dressing, look all gross and messy on the outside, I’m finding it increasingly imperative to simplify on the inside. To minimize, streamline and enjoy exactly what I need…and no more. The kick in the butt I needed came when I was listening to NPR a couple months ago and learned the average American household is filled with more than 300,000 things. THINGS. Um, horrible.

I threw out my TV. I cleaned out my closet and apartment. I stopped drinking soda. And you know what, it was totally awesome and freeing.

It also started getting me thinking about what I actually need and what things bring me joy versus what provides that short-lived pleasure and how the debt that I carry is totally NOT okay and how I need to stop eating out so much (*cough* more than $200 last month *cough*) and how I need to not deal with stress by online retail therapy. The unavoidable, un-fun adult things.

Like everything in my life, this will be a work in progress.

Maybe my house won’t look super cute and my clothes will be totally last season and my car will be so old it could be auctioned off in an antique car show, but I’ll keep reminding myself that I’ll still have the good stuff. Food. Friends. Family. This blog. My health. A sense of humor.

In other words, the avocado, lemon, tahini and nutritional yeast of it all.

Easy Avocado Dressing
adapted from Mama Pea’s Sunshine Kale Salad
Prep time: 5 minutes

1 small to medium avocado
juice of 1 lemon
1/4 cup water
1/4 cup nutritional yeast
1 T tahini
1 t dijon mustard
1 t minced garlic
salt + pepper, to taste

In a food processor or blender, blend all ingredients until smooth.

Add more water for a thinner dressing.

Makes 1/2 cup dressing

And I highly suggest you dump this dressing over a head of chopped kale and mow.on.down.

I’ve eaten it for three days straight now.

YUM! I know lots of people have an aversion to GREEN foods/eats, but it never bothers me! Split pea is one of my favorite soups :). The dressing sounds delicious

I definitely need reminders to simplify – I really need to figure out how to not “want” all of those things: cute place, cute clothes, etc. etc. Ugh.
I’ve been a little obsessed with avocados lately – this dressing sounds wonderful! Will make soon!

Does it brown when you leave it in the fridge? Should I eat the whole batch at once so it doesn’t brown? Because I will.

Thought I’d share my own little twist on this: Avacado, cucumer,arugula,whatever spices you desire, egg yolk(for a protein punch)! Puree, refrigerate and voila! Enjoy! Of course squeeze some lemon or use fruit fresh powder as a preservative! Also, a quick kale fix; steamed kale, then drizzle flax seed oil to taste! Yummy & nutritious!

I am all for simplifying. But not in my closet. I think my closet will always overfloweth. And that’s okay by me, so long as I didn’t spend too much money on it [which I don't because it generally comes from thrift stores].

But diet! That can always use simplifying. There’s still room for speculoos spread in a simplified diet though, right?

What a perfect warm-weather meal. Easy, quick, yummy. I like it. I’ve been trying to make more time for things like long walks and picking up a good book and being still lately. It’s a work in progress, I’m still pretty awful at it. :)

Good for you! I also find cutting out restaurants to be a big challenge. It’s pretty interesting how hard it is to cook at home, even considering how much all of us in foodblog land obviously value fresh home-cooked food, when you know that you could just go get exactly what you’re craving at a restaurant. I guess we just have to develop more cravings for homemade food–and this dressing definitely sounds like one I could want to eat over and over. :)

I have moved so many times that I no longer like having a lot of ‘stuff.’ It is very freeing to say ‘no’ to knick-knacks, excess makeup, a shirt that just might fit again someday, etc.

As for the dressing…um, why haven’t I thought of that? I have already discovered the wonder that is avocado+tahini+chickpeas (ie, guacamummus); I can’t believe I never thought to skip the chickpeas and add more to make it a dressing. Thanks for the inspiration!

Oh my goodness. I made the dressing to go on top of a spinach/kale salad last night for me and my mom. We both kept saying “This is SOOO good” every few minutes..needless to say, it’s absolutely fantastic. Thanks for the recipe, Holly!

This is exactly the kind of recipe I was looking for, and I happen to have all of the ingredients on hand! Thank you! I am feeling the need to simplify as well. My house and life feel cluttered, and I want to make sure I sort through all the “junk” so that I have room for the important stuff. There are so many things taking up space in my house and my life, and it’s time to get rid of stuff. Thanks for the inspiration.

This post really spoke to me! I am trying to do the same thing: simplify. Its amazing how many times I can fill up a trash bag of junk and still have so much clutter. Its an ongoing process, but I finally feel like I’m making progress! Next: brush up on my healthy eating habits. which means i am about to scour your visually enticing recipes. yum!!
