Yum! My dinner would have been vegan if I hadn’t covered it in feta! haha. I sauteed zucchini, fresh corn, tomatoes, and onion in rosemary olive oil served over pasta. Mmm mmm!
I need to make the mmm sauce, ive heard such good things.
Last night’s dinner was really good! I made tostones, chicken simmered in homemade ancho chili sauce, and a tomato salad with balsamic vinaigrette and sundried tomato jack cheese.
Well I know what I’m having for dinner tonight.

Another option for the above veg is to make vegetarian mousaka. But it requires bechamel, and who has time for all that wisking?
If it makes you feel any better, I was in a play in 5th grade where I was the alarm clock.
No joke.
My job was to stand up on a chair three times during the play, hold a clock above my head, and say “ring.”
Step Nine: You come to my house and make that for me.
Step Ten: We drink wine and hilarity ensues.

My dinner SHOULD have been vegan, but I added chicken to the recipe. Quinoa mixed with black beans, fresh roasted corn, salsa, and ground chili-lime chicken. Made a vatful, so it’ll also be my lunch and dinner today.

I love meals like this- especially for the leftovers. Also good for this? Frozen veggies. Not as fancy as roasted (and you know I love me some roasted veggies) but it eliminates needing to think about it in advance for lunch!
That’s 30 minutes at 400 degrees. Not 3 hours right? I kid!! And I stared at the bag of potatoes for a good 5 minutes thinking they were cahsews but why are they in mesh? Oops.

For lunch I’m eating a big pile of roasted okra with spicy mustard for dipping. I’m strangely excited about it.
