It’s all about the “F” this weekend – fun being the most important word of course!  Even my 11-mile run yesterday went AWESOME, despite some rather chilly and windy conditions.  I left the house at exactly 9am and 11 miles later, returned at 10:40am – 9 minute miles!  I was pleasantly surprised with my time…between the weather and running the long one by myself for the first time in a couple weeks, I expected way worse :).

After I got back, I drank about a whole Nalgene water bottle and stretched my muscles for a good while.  Stretching is IMPERATIVE after running.  Running actually shortens your muscles, rendering you less flexible.  By taking the extra 10 to 15 minutes to stretch (especially after a long run!), it will dramatically help your flexibility and make you feel a bajillion times better.  I promise!

After the run, I scrounged up what I could from what’s left of the food stash – a strawberry spinach salad with a sprinkle of walnuts and almonds and lemon honey vinaigrette (EVOO, honey + lemon juice).  With it, I had a small bowl of granola topped with vanilla soymilk and a heaping spoonful of shredded coconut.  Coconut on cereal might just be my new fave!  With some gorgeous lilacs…

 After eating, it was family time!  We had a party for my uncle yesterday, so on the way, I grabbed a lil’ Saturday java boost (coffee with 2% milk) and headed to the par-tay!  I got to see one of my favoritest people in the world – my cousin Tom’s son Jonas.  We were born on the same day actually, so we are kind of bonded in that way.  Isn’t he just the cutest thing ever?

At the party, I dipped into the fruit stash for some apples and strawberries (multiply this amount by 2 – I went back for seconds) then enjoyed some of my uncle’s famous beans with tortilla chips and two small lemon bars.  It was sooo good!  Unpictured was of course, a Diet Coke to go along with it all!

The portion on the beans and bars may look bigger than it is, because late afternoon I was getting hungry again.   My mom happened to have an extra Apple Pie Larabar in her car (I got her hooked), so I had that to tide me over a bit longer.

Later that night, I met up with all 6 (7 including moi!) of my best friends from high school, which was awesome because we can rarely ever get anybody all together!  This meant however, that I did eat out again (oops!) and spend money I maybe didn’t need to, but it was totally worth it to see everybody.  We headed out to Billy’s Bar & Grill in St. Paul, where we started with a little Spinach Artichoke Dip with pita triangles. Ash and I split a veggie pizza (artichokes, mushrooms & green peppers – I had 3 slices), and I had a small side salad with balsamic vinaigrette.  All washed down with a nice Leinie’s Honeyweiss of course!

Whew – FUN TIMES!  This morning, needless to say, I was sooo excited to sleep-in.  Which I did…until 9am (uber-late for me and my morning body schedule)!  Then I got up and had fun examining all the fun goodies from Trader Joe’s I got yesterday…here are the 5 new items I purchased…

Righteous Rounds Chocolate Chip Cookies (RAW + made with vegetable/fruit extracts)
Thai Yellow Curry Sauce
Biryani Rice 90 Second Pack
Peanut Butter Cookie Larabar
Raisin Pecan Artisan Bread Loaf

Doesn’t that loaf look dee-lish?  Well, it was even better this morning as…..FRENCH TOAST!  Dipped in the usual combo (Eggbeaters, skim milk, vanilla & cinnamon) and topped with almond butter (I restocked!), a drizzle of maple syrup and raspberries.  Did I mention french toast is one of my favorite foods?

Later, me and my family (who were in town for the festivities) went over to see my sister’s new house!  It was super cute!  After, we decided to grab a little lunch before the fam had to hit the road back to Wisconsin.  My little sister requested Bruegger’s Bagels – it’s her fave, and she can’t get it in WI!  For me, I was feeling a salad, so I had a make-you-own-salad mix featuring….mixed greens, cucumbers, sprouts, red onion, blue cheese, cranberries, almonds and balsamic vinaigrette.  It hit the spot (along with few sips of mom’s Diet Coke!).

Now I am blogging and chomping on my new TJ’s chocolate chip cookies.  Although the calorie count/raw/semi-nutritious thing coerced me into buying them, I don’t know if I would again.  They are too crunchy for me (I like mine chewy and soft!) and taste kinda funny.  They will still definitely be eaten up though :).  The tea on the other hand?  Chai-tastic!

The day beckons me away…the sun is shining and this girl is going to go get some things done, including a leisurely walk outside.  I have a new recipe concocted for dinner and am looking forward to some much needed yoga tonight to stretch out my fatigued muscles from yesterday.  Should be a fabulous Sunday…hope yours is too!
