Good morning dudes…I don’t think I’ve ever blogged this late.  Being a g’ma, it’s often hard enough just to find me up past midnight :).

Brekkie was especially delish this morning thanks to the tag team of champions: yogurt mess + Heart Thrive:


nonfat plain yogurt + ground flaxseed + shredded coconut + strawberries + dollop o' raspberry jam (straight-up Smuckers - the good stuff)

Sorry Heart Thrive peeps…the Cranberry is BY FAR my least favorite.

However, my snack more than made up for it.  A homemade concoction of Banana Nut Cheerios + sunflower seeds a.k.a the ying (sweet) and the yang (salty).  Makes for maximum satisfaction.

I can’t believe I have totally forgotten to tell you how WELL my first week at the new job went.  My boss is fantastic.  My co-workers are incredibly helpful and funny.  And there is minimal scanning involved in the job.  Give it up!

Yesterday, we instituted Three Question Thursday at work a la Kristin, and today we proclaimed Fridays as “Fun Lunch Friday!”  Where is the most obviously funnest place to go ever?  Chipotle, obv!

Shoutout to my homegirl Alison who recently had her first Chipotle and obv, loved it!

Friday flew by and before I knew it, I was done with my first week of work.  Woowoo!  Then, I skedaddled on to my new flat (yes, I want to be British so I am calling it “my flat”) to whip up a quick dindin before hitting the road BACK across the border to Minnesota for a wedding.

This bugger was delish!  Also quite easy to make: I sauteed lots of kale in EVOO + garlic (ends up tasting a lot like Kath’s “Kale Chips” – which if you haven’t tried, you must!) then stufffed it in an Ezekiel tortilla and topped with a Morningstar Spicy Black Bean Burger. Voila!  Dinner is served.

Not without some frozen applesauce for dessert of course…

I had maybe 1/2 the zucchini and 2-3 tbsp. of the AB…about?

After I finally arrived back in the Minneapolis, I met up with my besties for some drinks at the bar where our other bestie works.  Quite vague details, I know.  However, I had a slight headache and was uber-tired from the drive (anybody else MORE tired from driving than actually working out and doing something active?), so I munched on some bar popcorn (a couple cups?) and just chatted.  Drinks before a 16-mile run doesn’t sound like a good idea to me.

Tomorrow’s agenda: run, shower, IKEA run and then wedding time!  Woowoo!

haha.. i was waiting for something to pop up for me to read. the boys are playing poker and i am BORED! but yay, holly to the rescue! so glad your job is the bees knees. that is what i like to hear. and chipotle is def fun food! and delicious to boot. to boot? that doesnt make sense at all. dude, driving is TIRING! i hear you there. have fun tomorrow, er, today.. whatevs.. love you!

I still haven’t had Chipotle! I need to try it because you can’t go wrong with a whole bunch of veggies and guac, am I right?!

Zuke slices and AB is new! Sounds like a fantastic combination though! Glad your first week went well! Driving is so mentally draining – I know what you mean by being tired!

WOOHOO Ikea :D That place is on my list of weekend adventures as well!

girl you totally know whats up — the cranberry heart thrive is def. my least favorite too .. i do not dig the orange flavor and it’s too tart — meh.. give me chocolate chip over that pup any day.

I found heart thrives at Whole Foods but only apricot, and since I made apricot scones they weren’t so appealing. Hopefully they’ll get something chocolatey in stock soon

So glad to have you back!! Boo to driving for hours but YAY that you’re back in the cities. Whoop whoop!! The zucchini and AB thing sounds rocking girl. Although I’m pretty sure that if you handed me a dirty sock with AB on it I would at least try to devour it!

People also need to stop going to Chipotle cos it’s making me literally frantic to get there! I haven’t been in over a year!

Oh and big thumbs up on the black bean burger. Fave!

Chipotle is A-Mazing! Now that is a fun place. I love their lime chips.

ohh dang brekafast really looks amazing….i’ve gotta get me some of that heart thrive!!! I also like the idea of wrapping a veggie burger inside leaves to make a wrap!! I’m behind..i know…i know…somehow i always feel like it’s not a complete meal without carbs!!!

I’ve never heart of Heart Thrive but it looks good! I love the idea of “real” energy bars as opposed to the crap you find in most stores.

Also, that spicy black bean burger looks so good to me for some reason. Is it buffalo flavored?? I love buffalo sauce! I’m going to get myself into the kitchen to make up my own, I can’t believe I haven’t thought of this yet!

it is not buffalo flavored…just spiced up with some cayenne, cumin and garlic if i believe so. ohhhh definitely concoct a homemade one and i want that recipe!
