…and get ready for a long blog post!  Two days worth of foodie goodness is a lot to take in at once!  And I promise, if you read this entire post, there will be a worthwhile treat waiting for you at the end, wink wink ;).

First things first, we need to start back at yesterday morning’s breakfast…enter a warming bowl of oatmeal on a not-so-warm day.  Tuesday’s mix included:

1/3 cup rolled oats + 1 tbsp. oat bran
1/2 banana
1/3 cup blueberries
1 tbsp. raspberry preserves
1 tbsp. peanut butter
sprinkle of slivered almonds

It was like PB+J+B oatmeal!

Lunch was just as delicious – it was one of my yummy black bean sammies!  I layered two slices of toasted Ezekiel bread with mustard, mashed black beans, tomato, spinach, cucumber and avocado.  Along with my last VeggieGirl blondie…it was a smashing lunch!

This is honestly one of my favorite sandwiches.  The only catch is you MUST have avocado.  It just makes the sandwich whole!

Snacktime brought a new Chobani flavor to my tastebuds…strawberry!  Honestly, I wasn’t super excited about strawberry because I feel as though strawberry is the token yogurt flavor.  However, I totally loved it!  It was perfectly fruity and strawberry-ish…along with some berries and a Nature Valley honey + oats granola bar, it tasted very fruit crisp-like (aka delicious).

Also, I forgot to tell you Chobani is coming out with both Pomegranate and Pineapple flavors!  Umm…yummm – I need some of that now!

The day yesterday went by pretty fast, although by the time I left work it was pouring rain.  I was so mad because yesterday was supposed to be the real day one of marathon training (I don’t run on treadmills b/c I hate them with a burning passion).  No gal wants to start off training for a 26.2 mile run on a bad foot.  You want to please the running gods, not piss em’ off :).  By the time I got home over an hour later (a drive that is only supposed to take 1/2 hour), my patience was wearing quite thin.

I crafted the quickest dinner possible…junk salad and quick garlic toast!

I toasted a slice of Ezekiel bread then slathered it with a bit of Earth Balance spread and garlic powder.  For the salad, I threw together…

2 cups spinach
1/2 cup chickpeas
1/4 cup sundried tomatoes
1 chopped celery stalk
2 chopped carrots
1/4 cup cucumber
1/2 avocado
sprinkle of slivered almonds
Wee Willy’s Homemade Red French Dressing

Of course, I needed a little treat after such a frustrating drive home :).  Enter one of my new favorite concoctions: mashed banana + PB over granola!  It was a big, hot mess!

Then I slept for 12 hours.

Waking up feeling ever so refreshed, relaxed and rejuvenated, I delved into another bowl of oatmeal, seeing as the weather outside was still a bit damp.  For some reason, I totally deem a warming bowl of oatmeal quite necessary on any kind of morning that isn’t warm and sunny.  Today was a classic combo of…

1/3 cup rolled oats + 1 tbsp. oat bran
1 banana
LOTS of cinnamon
heaping glop of peanut butter

Along with my usual morning cuppa joe with 2% milk (I don’t always post my coffee pics, but you can bet your bottom dollar I have it every morning!  Although with Mr. NoMeatAthlete’s help, I am cutting down!)…

Snacktime was a handful of blackberries, which are so much fun to photograph.  Look how pretty they are!

Filled with newfound energy, I attacked a couple projects at work before truly starting my marathon training today!  My sister and I have decided to base our training off of Senor Hal Higdon – running man extraordinaire!  Click here for the two novice schedules we are working off of.  Since I am one day off, I am going to run on Friday (instead of it being a rest day).  Today’s three miles were glorious and felt awesome!

Back from my lunch/run break, I dug into a nice sampler of items: PB+J on Ezekiel bread, 3/4 cup celery sticks (love that crunch!) and Pirate’s Booty Barbecue flavor.  Along with a blueberry pomegranate acai Vitamin Water 10 (lovin’ this stuff!)…lunch was delish!

Afternoon snacky was more Chobani Peach Greek yogurt, blueberries/blackberries + TJ’s Blueberry Muesli.  One of my fave snack combos of all-time…

After work, I headed over to my lady Ashley’s house for some good time girl chat before beach volleyball tonight.  We caught up, gabbed away and made dinner togetha.  Ash is a healthy friend o’ mine, so I have no worries cooking up a yummy dinner with her.  Tonight, we had a little B.F.D. – breakfast for dinner!

Cinnamon French toast with a veggie frittata baby!

I slathered my French toast with a little peanut butter (naturally!) and a drizzle of maple syrup.  Gotta love B.F.D. – it always hits the spot!

After dinner, we changed it up and headed to volleyball, where get this – we won all three games!  This is a team first people.  We are used to being the team that the other team wins all three games against.  Today, we were that team.  Woowoo!

It gets even better…although it’s quite late again (good thing I got all that sleep :)), I am still clearly on a volleyball high and feeling super generous….so….

I love greek yogurt with granola or Heart to Heart with chocolate chips for a healthy(ier) and totally yummy dessert! :D

And OMG we are banana, granola and pb twins!! haha! Your mashed banana + PB over granola hot mess is very similar to something I do!! I mash a banana, drizzle AB on top and then sprinkle it with some granola and it’s like heaven on a plate.

Separated at birth I tell ya!

My favorite is actually plain 2% greek yogurt, but since you asked for a concoction, I also love plain nonfat with walnuts and apple butter (and maybe banana if I’m feeling crazy). Thanks for posting the giveaway!

That lunch of the Ezekiel Black Bean sandwhich and veggie girl blondie looks AMAZING! What kind of ezekiel bread is it- sprouted grain? also- i see alot of you guys always eating veggie girl’s blondies– does she send them to you or do you make them? if you make them- where can i get this recipe!?

Also about the chobani giveaway-
I actually use greek yogurt in one of my FAVORITE (and healthy!) DINNERS! It is Bobby Flay’s Turkey Kofte with Apple Raita and Spinach- http://www.foodnetwork.com/recipes/bobby-flay/turkey-kofte-with-apple-raita-and-spinach-recipe/index.html
basically it is turkey “meatballs” in wholewheat toasted pitas and stuffed with spinach and apple raita…the apple raita includes:
1 cup Greek yogurt
1 Granny Smith apple, cored and finely diced
1/2 teaspoon kosher salt
Pinch ground cinnamon
Pinch cayenne pepper

My favorite is greek yogurt with strawberries and bare naked granola. Its my favorite snack, or desert, and my husband hates it so i never have to worry he’s going to steal it ;)

oh my goodness all of your eats look sooo good! All of my favorite things..bread, peanut butter, oatmeal, yogurt.. can you say yum?? My favorite yogurt concoction is banana, raspberries, and peanut butter (the picture on my header!) Thanks for the giveaway!

This rocks, I love Greek yogurt, and Chobani is my favorite brand! My favorite has to be a parfait with 1/2 cup dark cherries, on top of that 1 plain chobani container with 2 tablespoons Hershey’s light syrup mixed in, with 1/4 cup homemade chocolate cherry granola and 1 tablespoon dark chocolate chips on top.

First off, the black bean sandwich looks delicious. My favorite yogurt concoction is vanilla with cinnamon and fruit. It’s a creamy fruit salad. I’d love to win because I really want to try Chobani, but it’s pretty pricey.

I love greek yogurt, but unfortunately I can’t have diary right now. :-( I know my hubby would love some Chobani though! He loves to put any kind of fresh fruit in his yogurt.

I SIMPLY can’t get enough greek yogurt…to the point where i’ve eaten it as a part of all 3 meals- wowzza! I’d be thrilled to win this give-away! my favorite greek yogurt combos include greek yogurt (plain) mixed with blueberries, flax, raw oat groats, and a swirl of raw almond butter. Drizzled with a bit of agave and a splash of almond milk= perfect breakfast!! thanks!

Chobani yogurt is the absolute best. Me and my sister are addicted to it and eat it evey day! I love all flavors (except Honey, have not tried it yet) while my sis favors the plain. In mine I love mixing in Sensible Foods Dried Fruit Snacks, Cherry Berry being my fave. They add a nice crunch and count as 1 daily fruit serving. Yum. Hope everyone is having better weather than we are here in Boston! We need to see the sunshine soon!

My favorite Greek yogurt recipe is 1/2 banana in the bottom of a parfait glass, a layer of Greek blueberry yogurt, a layer of blueberries, more yogurt, and then a layer of granola on top. You can really use any fruit of course and as many layers as you want. I love this!

I love Greek yogurt, but I have never tried Chobani yogurt. There are SOOOOO many ways to eat Greek yogurt; it’s hard to pick my favorite. But, since I have to pick, I would have to say plain Greek yogurt mixed with a little salt, pepper, lemon juice and herbs. It makes the best dip for veggies.

I mix in tons of fresh strawberries with some agave syrup, cinnamon and nutmug, and have it as a snack everyday!
