{gluten-free} Almond Flour Pancakes

reasons why pancakes make the perfect boyfriend

  • they’re stacked
  • they taste even better drizzled with maple syrup
  • they don’t talk back
  • they’re hearty + filling
  • they don’t know how to play video games
  • they’re done in less than 10 minutes
  • they snuggle you without objection after a long day of work
  • you can have however many of them you want at a time

TWSS? jokes completely implied.

While all of these reasons above perfectly describe why I love pancakes, my favorite thing about this classic breakfast food is perhaps the fact that you can take a basic recipe, add few tweaks of your own and turn them into something completely befitting of you.

In other words, they’re customizable.

Last time I checked, you couldn’t do that with men…at least not with delicious results like these {gluten-free} Almond Flour Pancakes.

You cannot change men.

But you sure as hell can change pancakes.

Eight ingredients. One bowl. Ten minutes to {gluten-free} Almond Flour Pancakes.

1 1/2 cups almond meal (I like Trader Joe’s brand)*
3 eggs
1/4 cup milk of your choice
1 t vanilla extract
2 T maple syrup
1/2 t baking soda
1/4 t salt
1 t ground cinnamon

*almond meal can also be made by pulsing raw, blanched almonds in your food processor until they are finely ground and look something like this

Mix well. Heat a skillet. Dollop 2 heaping T of batter. Cook. Flip. Cook.

Top with garnishes of your choice.

(I chose sunflower seed butter, 1/2 mashed banana + a drizzle of agave syrup).

Devour.

That’s it.

Now, if only men were that easy…

I also love that I can make 1 big batch and freeze the leftovers. Then you just pop them in the toaster and enjoy! :) I <3 pancakes

These look seriously incredible. I’m presented with delicious recipes and food pron on a daily basis, and I always says I’m going to make it, but this…damn! If I had enough almonds on hand I wouldn’t even be sparing the time to type right now! Off I go to the grocery store…

I make GF pancakes w/ almond flour too! Well, I say “I make”…that would imply that I do this regularly, which I do not..haha! Yours look awesome!

What I do make regularly is coffee…which I am about to go do now….

The best thing is if you feed your man pancakes and he becomes a little bit more like them…..they snuggle more, don’t talk back, etc. You get the idea ;)
