I am thrilled to be doing a guest post for Holly, everyone’s favourite Everythingtarian.
It’s summer at the moment (even if the UK weather doesn’t act like it :P), which means one of my favourite foods to eat is pesto. For me summer = basil. There are many different ways to eat pesto. My favourites are in pasta or in a roasted vegetable sandwich.
So I thought that I would share with all of you one of my new favourite pasta dishes. (I actually made this dish using sun-dried tomato paste, as I could not find red pesto. But I know it would work well with either red or green pesto).
Summer Vegetable Pasta
250g mushrooms, sliced
200g spinach, washed
Pasta for 2 servings (I never measure pasta, I just tend to eyeball it)
Several tablespoons pesto (or sun-dried tomato paste)
Cheddar Cheese (optional. The first time I made this I had no mozzarella, so used grated cheddar instead. But I added some mozzarella when I reheated the leftovers)
Put the mushrooms in a pan on medium heat with a little oil and cook till tender. Add spinach and cook till slightly wilted.
Meanwhile cook pasta till ready (I use wholemeal pasta and tend to cook it for about 12 minutes).
Add vegetables to pasta, along with the pesto.
Stir together so it is all mixed well and add the cheese, allowing it to melt a little.
