As someone who is looking to lose a few pounds of fun chub, I am always looking for healthy recipes that are actually going to fill me up (no vegetable soups, paltry salads + pasta – you don’t do the trick). Thankfully, I’ve got lovely guest posters like Shannon with just the recipe to help an Everythingtarian sista out. Enjoy…whether you want to lose a few or not!!

Hello fellow Everythingtarian readers! 

My name is Shannon and I reside over at Losing It! My weight loss blog.  How has it gone?  Well, not so great…  I have been lacking in motivation and the emotional eating has been way overkill this past year, but I am happy to say that I weighed in and got a major wake-up call and it definitely helped me this week.  I weigh in on Tuesday evenings (yes, it’s hard to eat on those days because you don’t want to eat too much salt or heavy foods because God forbid you gain water weight when you go to the meetings!).

My post for you today will be one of my favorite egg dishes, Chili Egg Puff. It is perfect to tote off to work. (Especially for those of you like me who can’t eat until you are 50% awake at work… Especially on Mondays.  Oh how I hate thee Mondays!)

5 eggs
1 cup low fat/fat free cottage cheese
2 cups shredded low fat jack cheese
1 can diced green chilies
1/4 cup flour
1/2 tsp. baking powder
A pinch of Salt and Pepper

Set the oven to 350 deg. Beat eggs in a bowl until light and lemon in color.

Add in flour, cheeses, baking powder, salt and pepper  Stir in chilies.

Pour into a 9×9 baking dish sprayed with cooking spray, or what I like to do is make individual “muffins” by pouring it equally into 12 cup muffin pan (again, sprayed with cooking spray).

Bake at 350 for 25 minutes.  They are done when they spring back to the touch.  You get 2 muffins per serving. (and 5 PointsPlus for you fellow Weight Watchers folks)  I love them!  Such great flavor, and the cottage cheese add a lot of moisture!

Love this! I really just got into eggs only recently. My fave way to eat them these days is in a “fried” (using cooking spray) egg sandwich with avocado & tomato.

I love doing this. I Just toss in whatever salsa and veggies I have and Voila! Breakfast on the go.

Those look really good! I will try to make these over the weekend. I like/love eggs and my favorite way to eat them would have to be poached. I will eat a poached egg on top of pretty much anything… like rice pasta…. or salad… or steak…. I’ll just stop now :)
