Just Beet It

We made it.

All hail the weekend.

I know I am.

(raises lighter in the air as if at a KISS concert)

I know I am also sending you all even MORE oodles of love for all your congrats and sweet, lovely comments on The Healthy Everythingtarian’s first birthday! And for not making me feel alone in my neurotic craziness. And most importantly, for all your love and support on the construction of our well in Cambodia.

Twas’ a long, insanity-filled five days. That’s for sure.

Anyways, I had another new breakfast creation yesterday – Asparagus + Brown Rice Breakfast Scramble!

3/4 cup brown rice
3/4 cup asparagus
1/4 cup onion
1/2 T olive oil
1/2 T minced garlic
2 eggs
pinch of crushed red pepper
sprinkle of nutritional yeast

You know me – I like my breakfasts sweet, sweet, sweet. However, once in an Everythingtarian while, savory just does the trick…

Yum. So yum in fact, I’ve had it the past three days in a row for breakfast.

Lunch yesterday was out of pure convenience and laziness – a trip to Gotham Bagels!  I heart this bagel store because they have my new obsession (which I am determined to recreate at home): scallion tofu.

The “V” = heaven on a bagel.

It would be a vegan sammie consisting of scallion tofu, roasted poblano peppers, tomato, arugula and avocado all on a whole wheat bagel…

Along with a bag of honey dijon kettle chips + Diet Coke, I am still thinking about how delicious this lunch was.

Since this week was crazy (I had worked 40+ hours before even coming into work on Friday morning), my boss told me to go home.  Yes, she told me. One of the many reasons why the people I work with rule. At 2pm, I skedaddled out of work early and pondered my options for the afternoon…

Laundry?

Go for a short run?

Clean my apartment?

Crawl in bed with my new Food + Wine magazine?

Go to Whole Foods, the co-op and every other grocery store in town?

Sold to the highest bidder…also known as Whole Paycheck.

WF pecan chocolate chip cookie.  Obviously, that was a must-by.

After spending $80 at three different grocery stores, I had a mild heart attack before making it home safely to put away all my groceries.  Then, taking a cue from the very first blog I ever read, I made this…

Roasted Beet Salad with Goat Cheese and D’Anjou Pear? Yes please.

The only substitutions I made were baby spinach (for arugula), balsamic vinegar (for red wine) and instead of splitting the beets up, I ate them all myself.

I am now mad I ate all the beets, because I want this for dinner tonight and every night.

Then, because I am clearly obsessed with Katie, I whipped up an old favorite recipe of hers…

Healthy Breakfast Bars?  Also, yes please.

I made a couple of substitutions here (depending on what I had on hand), including stevia baking blend (for brown sugar), 1 T cinnamon (for 1 measly teaspoon), maple syrup for honey and 1/4 cup applesauce + 1/4 cup Greek yog (for 1/2 cup pumpkin puree).

Breakfast for dessert? Definitely the new BFD.

Alright, now I really do need to beet it because I am running an 8K race (= 5 miles) this morning!  It’s rainy, cloudy and kinda chilly here in Madison, but the Crazylegs racing spirit will prevail.  I have no doubt. What I am a bit doubtful of is the fact I haven’t run since Monday’s 9-miler…wish me luck!

What are YOU up to this weekend? I slept 11 hours last night, am off to the race and then am looking forward to a weekend of writing, laundry, sleeping and catching up on workouts. Happy weekend :).

I’m all over breakfast for dessert and dessert for breakfast. Who cares what’s eaten when so long as it’s all eaten?
11 hours?! I’m jealous. I got 6! This is going to be a long weekend…

Creative breakfast! Love the rice in the mix. And how delicious are whole foods cookies??? They can get in my belly any time they want :) Good luck at the race today- kick booty.

Weekend- last night group fitness instructor dinner, this am- taught step, baking, going to an SPCA art fair, supposed to go to a baseball game, tomorrow=blogger meet up!

Ha! I got 8 hours and called it a good night! Loooove the looks of that beet salad. I’m having a bit of a love affair with beets right now.

Have fun at the race!!! I’m not up to much, kickboxing/step classes, hanging out with some people. And possibly purging the contents of my closet. Should be fun!

Wow, that scallion tofu bagel looks so yummy! Good luck @ the race. I definitely could eat bfast most meals…it has always been my favorite! WF’s cookies are THE BEST!

Yum! That bagel looks sooooo amazing! I’ve been stuck with whole wheat bagel thins for a while and while they may be shaped like a bagel, they are definitely not bagels.

I’m also thinking of how amazing that lunch must have been! I love when you make something that you still think about days after.

Sounds like a great weekend!!!! Good luck with the race today. I know you’ll kill it! Although, I do hate running in the rain. I know some people love it, but for me, I would rather run in pure humid desert-like temps than in the cold rain.

Clearly I’m a little late to say “good luck”, but I hope the race went well this morning!! And I hope you have a relaxing weekend after your crazy week. Also hoping to play some “catch up” myself this weekend. So far today, I haven’t been QUITE as productive as I’d hoped. Oh well…. :)

Okay for starters… CONGRATULATIONS on one year! What an amazing accomplishment. And the fact that you posted a good majority of the days, that is an achievement all in itself. Dedication is something you obviously do not lack, and writing is evidently one of your many talents in life! I look forward to reading your blog for as long as you feel like writing it :) Or until you get a book deal, become a famous author, and i officially have to buy your book… Then i will buy two copies! ;) Your life is just full of awesome things lately, i can’t believe you are so involved in other worldly endeavors like the building of a well. That must have been a great feeling, i am sure your spirit feels so fresh :) By the way, nice bagel… I wish i was able to re-create that for breakfast tomorrow but i have NONE of the ingredients and i don’t plan on going to the grocery store for at least another week or so after the damage i did at WF Thursday… I need a co-op!

I’m so in love with beets, I LOVE them roasted. But they always turn my pee red, which freaks me out a little until I remember that I ate them the day before. Haha, I feel like I always give you a little TMI on my comments, lo siento for that. :-)
