
How can a day like this not be fabulous? Honestly, when I woke up this morning, I wasn’t feeling so awake (think huge bags and frizzed hair) but by the time I got to work, the rest of the day just flew by. A Monday like that is definitely something to be thankful for, as is a yummy bowl of KERF-style oatmeal.
1/3 cup rolled oats + 1 tbsp. oat bran
water
1/4 cup granola
scant 1/4 cup yogurt raisins/goji berry/cranberry/pecan trail mix
1/4 cup blackberries
1 tbsp. almond butter


Mid-morning, it was the last of the Larabar stock…Apple Pie!

By the time lunch rolled around, this gal bounded, leaped and darted OUTSIDE! Like I’ve said before, I can only take so many hours behind a computer at a desk before I need to get out and breathe the fresh air. What a beautiful lunchtime walk! I thought it was time I invited you on one of my midday jaunts. This time, I munched on lunch (oh, that rhymed!) while I walked and took pictures: almond butter + raspberry jelly sammie on my new Arnold’s Sandwich Thins and a banana.




Lunch wasn’t quite complete without a cuppa Green Chai tea and some peanut M&Ms!

The afternoon at work flew by – I had lots of work to keep me busy, which is awesome. I had some of my Stonyfield Farms plain yogurt with granola, strawberries and blackberries. It was the perfect mix of protein + carbs to keep me satiated and satisfied the rest of the day!

Before I knew it, it was time to go home – woowoo! On my ride home, I argued back and forth with myself whether I should run now, run later, go to the gym or what. Why do we waste so much time thinking about when/what/how to workout than actually just doing it? If somebody could let me know, I would appreciate it! I decided on a quick carb-loaded snack of saltine crackers to quell the hunger and fuel me for the full 6 mile run!


Dinner was maybe one of the BEST salads I’ve EVER made! On a bed of spinach, I layered red onion, corn, tomato, black beans, salsa, a dollop of Greek yogurt, 1/2 avocado, cilantro, drizzle of EVOO, drizzle of honey and a splash of lime juice. PERFECTION PEOPLE!
Now I am watching Dancing with the Stars (go Ty, Gilles and Shawn – I can’t make up my mind!) and munching on a little trail mix concoction – a little Kashi GoLean Honey Almond Flax, Tarjay trail mix, True North Almond Clusters and two Black Mission Figs. Then, I have a some sleep to catch up so it’s off to bed for me!
