Alright kiddos, I need to win the Foodbuzz/Nature’s Pride comp and get me to San Fran for the 1st Annual Foodbuzz Blogger Festival! Foodbuzz is hosting a contest with Nature’s Pride bread - you need to concoct a recipe using their bread, and six winners will be picked for a free trip (transportation + accomodations) to the Foodbuzz Festival where they will demo their recipe!

Here is my entry:
Pumpkin Apple Whole Wheat Bread Pudding
2 small Honeycrisp apples
1 tbsp. butter
sprinkle of cinnamon
1 1/2 cups skim milk
1 cup apple cider
3 eggs
1/2 cup pumpkin puree
1 tbsp. cinnamon
a couple dashes nutmeg
1/3 cup Xagave syrup
1 tsp. vanilla
1 tsp. salt
1 small box raisins
1/2 loaf Nature’s Pride 100% Whole Wheat Bread
In short, I sauteed the apples in butter + cinnamon. Then I mixed together the rest of the ingredients (sans bread) in a bowl. I added the apples, tore up the bread in chunks and mixed it all together. It went in the fridge for an hour to soak/cool. Then it was baked for about an hour in a 350 degree oven.
Those were totally technical directions, I know.

The recipe is NOT perfected by any means. So, if I do get chosen, I will definitely be tweaking some things (i.e. adding some brown sugar, maybe some more spices?), but it was definitely a good start :).

Ahhhh, I love it! I’m making some this weekend for my honey’s birthday – but his will be no where near as healthy as yours! I’m going to make an Apple one with Brandy sauce. (very Wisco-like I thought)

Good Luck Holly!! This is definitely a creative recipe so I’m all for it!! I can’t make a big batch of bread pudding and leave it at home with myself…I would finish it all. Hahaha I love the dark color you got on your bread…and apples in it! Ingenious!
