Woowoo for the weekend! As the title of my post suggests, it was all about the mini-meal today. At the end of the week, I like to clean out the fridge/pantry as much as possible, so meal combos can get a little random! This glorious morning started out with a lovely bowl of KERF-style oats and some more gorgeous sunshine streaming in through the window.
1/3 cup rolled oats + 1tbsp. oat bran
1/4 cup honey & oats granola
2 True North Almond Clusters crumbled
1/2 cup blackberries
1 tbsp. almond butter
Around 11am, I feasted on the first of several frequent meals. This one was simple, but oh so good: Fage 0% Greek Yogurt with 1 cup of strawberries and an Easy Fig Scone. The best part? I crumbled the last half of the scone INTO the yogurt combo – soooo delish! Eaten with a Diet Cherry Coke, perfection!
Early afternoon I needed a little perking up, so I delved into the 2nd mini-meal of the day: 1 cup of Kashi GoLean Crunch Honey Almond Flax and 1 cup of delicious, juicy mango! Then after I had my daily cuppa Green Chai tea. At around 4:00pm (start of the 1 hour countdown to the weekend!), I had my fave Cherry Pie Larabarand some crunchy carrots.
For dinner, I didn’t have much so while at the grocery store (picking up organic strawberries on sale, yessss!), I concocted a salad from the Kowalski’s salad bar: mixed greens, spinach, beets (my fave!), broccoli, cherry tomatoes, carrots, cucumbers, red onion, chickpeas, golden raisins, sunflower seeds, a sprinkle of honey-roasted peanuts and Kraft Light Asian Sesame dressing. I headed over after to work to babysit my little buddy Jackson and scarf down the salad with some lemonade!
I was still a bit hungry after the salad, of course! I found some Wheat Thins, dried cherries and more honey-roasted peanuts and threw them together into a pseudo-trail mix (including a small handful more honey-roasted peanuts – I couldn’t resist :)). After getting home at 10:30pm, my tummy was a grumbling so I snagged a small Easy Fig Scone along with a cup of tea to tide me over to write this post.
Whew – what a week! I am soooo excited for the weekend – if all goes according to plan, tomorrow should be a fabulous first outing to the St. Paul Farmer’s Market, followed by some errand running and ending with a 10-miler + dinner with one of my besties Ashley, who I haven’t seen in weeks! Sunday, I shall honor thy mother (even though I won’t get to see her :(), catch up on the million things on my to-do list and start practicing my beach volleyball skills – our league starts Wednesday!
Otherwise, I’m really working on the blog, coming up with new ideas and trying to get everything just how I want it. I realize the blog has been pretty food-centered so far, so next week I am going to try and spice it up with more workouts and fun life stuff. Can’t tell what it is yet, but I think it should be good!
