More Lovely Eats & Treats

Such a good weekend (so far)!  After the farmer’s market, I headed back home and cleaned like a maniac!  Dusting, vacuuming, organizing, you name it.  When I finally got done almost two hours later, it was definitely lunchtime.  I raided the fridge for a nice lil’ smorgasbord of leftovers.  Sundried & Tomato Stuffed Chicken, Easy Fig Scone, some carrots and strawberries (organic + on sale!)…

After lunch, I ran a couple errands and snacked on this baby in preparation for the 10-mile run with Ashley.  Thoroughly enjoyed the Pistachio – definitely gets an honorable mention on the Top 5 Larabar List!

Then, it was finally time for long run of the week!  Ash and I were both feeling a little out of it when we started (she was frazzled, I was half-asleep), but by the end, we were reminded of WHY we run.  Running, for both of us, is a huge stress reliever and mental cleanser.  We did 10 miles in just about exactly 90 minutes – 9 minute miles!  The time flew by as we chatted up a storm, and before we knew it, we were making dinner!

Homemade black bean burgers & sweet potato fries – one of the BEST combos eva!

Mexican Black Bean Burgers
adapted from Homemade Bean Burgers at Kath Eats Real Food

2/3 cup cooked black beans
2 tbsp. whole wheat flour
1/2 tsp. garlic powder
1/2 tsp. cumin
Pinch dried oregano
Salt and pepper, to taste
2 tbsp. diced red onion
2 tbsp. diced, seeded roma tomato
2 tbsp. cooked corn kernels
2 tbsp. finely diced fresh cilantro
1/2 avocado
2 whole wheat buns

Mash the first six ingredients together.  Mixture will be slightly dry, so add water as needed until the mixture becomes moistened.  Add the onion, tomato, corn and cilantro; mix well.  Meanwhile, divide the bean mixture in two and form two patties by hand.

Heat a medium saucepan over medium-low heat.  Spray the saucepan with cooking spray, and cook the patties on each side for 3 to 5 minutes.  Resist the urge to flip them or check on them too soon; just let them sit there and cook.  Once the burgers are done, slice the avocado into strips and split between the two burgers.  Smoosh on a bun, top with condiments of your choice and enjoy!

These burgers were sooo easy and sooo good!  Us gals showered, put on our best sweatpants and sweatshirts, then chilled the rest of the evening.  However, not before I enjoyed a Diet Coke (not pictured) and bowl of ice cream that is!  We went 50/50 with our ice cream – half of light chocolate chip and light caramel fudge brownie!

HAPPY MOTHER’S DAY MUMMY!

This morning, in honor of all moms, I made myself Polly’s delicious Oaty Cakes, and boy were they good!  Topped with some almond butter, sliced bananas and a drizzle of maple syrup (and a cuppa joe of course!) – deelish!

I froze the other half for an easy workday breakfast.  Now, I have about a million things to do and the weather is GORGEOUS outside – what’s a gal to do?  I’ve got a very exciting meeting later today as well, so hopefully I will have some super EXCITING news to share with you later!
