in Best Of,recipes

In the 4 1/2 years I’ve been writing this blog, I’ve accumulated a lot of things. A lot of posts. A lot of pictures. A lot of friends. A lot of words (A LOT of words). A lot of really nice comments. And of course, a lot of recipes. Many of them my own, while many of them the genius of others.

Some of my recipes, honestly, I’ve made only once or twice. But others are staples in my weekly cooking rotation and favorites of family + friends. As August winds down*, I’ve been making an effort to cook more and revisit some of my old recipes I’ve unintentionally forgotten as the ever-present blogging pressure beckons to make new, never-before-seen recipes destined for eternal pinhood on the boards of Pinterest. Reflection is a lovely thing, especially when food is involved.

I’ve made Spinach Pasta Frittatas and Veggie Reubens and Banana Custard Oats. There’s even been a revisit of Berry Oatmeal Scones, one of my very first recipes, which are baking in the oven as I type this. Only this time, I subbed fresh blackberries for dried fruit.

And yet, I still go back my old favorites.

Here are 10 of the best of the best. This list took me an hour to compile (the downfall of being ridiculously indecisive) but encompasses a lot of love and good eating from me to you.

Cheers, my friends.

10  /  Peanut Butter + Mozzarella Pizza: It’s weird and totally amazing, trust me. Plus, if you make it with my 4-Ingredient Beer Pizza Dough, the whole thing comes together in less than 1/2 hour.

9  /  Spicy Buffalo Tempeh Salad: A staple veggie-packed salad I eat for lunch and dinner all the time. You can easily make it with tofu or chicken too. Bonus: it’s manfriend, approved.

8  /  Roasted Butternut Squash Sandwich: This sandwich takes a bit of time to make (more than I am often willing to give it) but the results are kinda the best sandwich EVER. No joke.

7  /  {Accidentally} Perfect Vegan Cookies: I made a batch of these just last week for a few friends. No one will know they are vegan (just tell them the chia seeds are chocolate flecks or something).

6  /  Lentil Israeli Couscous Salad with Lemon Basil Jalapeño Vinaigrette:  A variation of this recipe is eaten nearly every week – whole grains, veggies, nutty crunch, cheese and a killer dressing.

5  /  Sweet Potato Corn Chowder: My favorite winter soup. Just last week, I bought 10 heads of corn and filled up a freezer bag with kernels which I fully intend to use in this soup later this fall.

4  /  Cornmeal Quinoa Black Bean Patties: When I am super prepared, I make a batch of these to have on hand and throw in salads, sandwiches or just eat plain. They’re a total keeper.

3  /  Summer Veggie Pasta + Kale Pesto: This is a recent recipe but one I’ve made five times since that post in June. Because I am totally obsessed with it (and kale pesto), it gets top billing.

2  /  Easy Avocado Dressing: Speaking of eternal pinhood, this might be one of my most popular recipes ever…and for good reason. It’s my absolute favorite dressing tossed with kale.

1  /  Pumpkin Molasses Cookies: This list would not be complete without my now-signature holiday cookie. It’s one of my very earliest recipes but one I come back to every winter season. If you know me and you’re planning to go to a Christmas cookie party I will also be attending, you can be positively certain I’ll show up with gigantic platters of these in tow.

*please don’t hate me for seemingly wishing August away because you know how fast this month flies by and right into September, where before you even realize it, you’ll be eating things like hot sweet potato chowder and molasses-spiked cookies and singing holiday carols while wishing the cold harsh winter away for the lazy days of summer**

**you know I’m right

I want to try every single one of those recipes – especially the pumpkin molasses cookies! I kind of wish we were attending a cookie party together :) Great job amassing such a delicious looking list of recipes. Hope the rest of your week goes well. I’m heading to your neck of the woods this weekend!

Those cookies were the first recipe of yours that I ever made…and possibly one of the first blog recipes I ever tried, too? Either way, they are divine!

That butternut squash sandwich just got me so excited for fall. I’m definitely going to be trying that!

These recipes look delicious. I’ll have to give the sandwich and patties a try. I just had lunch, but this is getting me hungry again!

You HAVE had some delicious looking recipes over the years, although I’m still waiting for my delivery of vegan cookies (said the lazy cook over here.) I’m also still waiting for the days of warm foods and sweatshirts, as we’re in the middle of a HUGE heat wave at the end of August. WTH, Mother Nature? I want fall! And vegan cookies!
