No Time to Waste

So much to do, so little time!

I do have to say, my day started off FABULOUSLY thanks to this gem of a breakfast cookie.  We must give credit to Fitnessista for this ingenious recipe, which you can find here.  It’s oats, protein powder, nut butter, milk and mix-ins of your choice to create a delicious little morning treat.  My favorite breakfast cookie is strawberry coconut with a drizzle of honey – HEAVEN!  Then mid-morning…it was APPLE time (cue “Hammer Time”)!

For lunch, I finally switched it up after all those Garbanzo Guac sandwiches.  Instead, I had a little bit of leftover Apple Cinnamon Quinoa with some Go Raw Pumpkin “Super” Chips sprinkled on top along with a nice lil’ green salad – spinach, red pepper, Wisconsin raw goat cheddar, sunflower seeds, a couple more crumbled Go Raw chips (sadly, I’m now out :() and some Organicville Sesame Goddess dressing.

After lunch, I took a glorious walk outside.  Since my job involves a WHOLE LOT OF sitting behind a desk, I develop a severe case of ADD during the day and take every opportunity I can to get outside.  It was a bit brisk out, but there is nothing like a nice 20 minute walk to clear the mind.  Love it.  When I came back, I had a small handful (2 tbsp. or so?) trail mix and a cup of Chai Green tea (my new fave!) for dessert!

Can’t go wrong with TJ’s Greek yogurt, honey, berries and granola for an afternoon pick-me-up!

After work, I looked at a new apartment (actually a duplex)!  I might actually be a real grown-up soon, you know, with like a rent payment every month?  The place was super cute – hardwood floors, high ceilings, a newly renovated kitchen, which was my fave part of the house.  Now let’s see if it fits in my budget!

Since my Indian cravings have been high lately (it IS my favorite food!), I whipped up a pseudo-Indianeque dinner tonight: Quick Curried Tomato Veggie Sauce with Whole Wheat Naan.  I sauteed 1/2 red bell pepper, 1 green pepper and 1/2 yellow onion in 1 tbsp. EVOO and 1 tsp. minced garlic.  I added one 28-ounce can diced tomatos and one 6-ounce can tomato paste.  With 1/2 tsp. each coriander, garam masala and Madras curry powder; a sprinkle of garlic powder, salt and pepper and dolloped with a bit of plain nonfat Greek yogurt and cilantro, I present to you…DINNER!

And finally…you want to talk about foodgasm?  Look at this gorgeous, delicious, yummy dessert – bananas with almond butter, unsweetened shredded coconut and dark chocolate shavings.  Drool at your own risk!

Yummm….I could go for another one of these!  Now onto Target, a little Yin Yoga courtesy of Polly, getting my stuff organized then it will be morning before you know it.  Breakfast IS my favorite meal of the day!
