Notes from the Fridge

I am lame.

This is my 2nd draft of this post.  The first one involved a ridiculous story about my breakfast fighting my lunch and dinner for the affections of my morning time apple. Where I come up with these things, I do not know.

What I do know is that (a) I couldn’t post that story without hanging my head in shame, and (b) this bowl of Pumpkin Mocha Fauxmeal was meh.

1 1/2 packets Cream of Wheat
1 cup water
1/3 cup pumpkin
drizzle of agave + maple syrup
1 Starbucks Via instant coffee packet
almond buttah


After eating some glorious bowls of oatmeal recently, the Cream of Wheat just can’t compare.  Sorry rice…in this form, you just don’t do it for me.

While I was snarfing taking my time eating, I looked over and saw the hazy morning light beautifully illuminating my refrigerator.  Naturally, my instinct was to take some shots and turn them into a collage for the blog. I mean, what else would you do?


Speaking of Cambodia, here is my shameless plug to donate and help build a well in Cambodia.

Also, that picture is of me and my Grandma from a road trip we took to the Badlands of South Dakota in the early 90’s.  To this day, it is one of my favorite pictures of us, especially since Thanksgiving weekend marks the 1-year anniversary of her passing. I LOVE YOU G-MA!

Snack was another perfectly crunchy and tart organic Braeburn apple, ranked #2 just behind my fave Haralson.


Lunchtime involved the concoction I conjured up last night, which I have deemed Spinach Red Curry Lentils over brown rice and topped with roasted kabocha squash.  Even though I would have made Julia Child shudder the way I accidentally oversalted the rice + lentils, it was still delish.



Dessert was a handful of yogurt raisins, cranberries, raisins cashews and almonds, while afternoon snackage involved a Clif Bar in the flavor of Chocolate Chip Peanut Crunch.  Not bad but not my fave.


Oh so luckily, I was on-call tonight at the PT job, but it turns out they didn’t need me!  Woowoo! However, the excitement was short-lived, because for some reason, I’ve been kind of meh today.

To cheer myself up, I roasted shiteload of veggies – brussel sprouts + carrot fries!


It is perhaps my fave dinner I’ve had in awhile.

Now, I am going to hit up Dave Farmar for a yoga podcast and bake my brains out + frost a bajillion mini birthday cupcakes for my co-worker.  Hopefully that should cheer me up!

Challenge update…

  • The flossing challenge instigated by Andrea + I is going well.  I will admit I am not flossing everyday, but I am averaging every other day.  I consider that a vast improvement from not doing it at all ;)!
  • The yoga challenge Angharad and I decided to start is also going well.  The first week, I made it to yoga 2/3 times, but this week I am already at 2/3 with yoga scheduled for tonight AND tomorrow, which makes it 4/3 this week (making up for the one I missed last week)!

Alright kiddos, sorry to be meh, but in the meantime…

Holly! Your lunch sounds delicious. It’s weird that now that I can grocery shopping again I haven’t seen a single kabocha in sight. My horrible eyesight leads me to believe that the dark green acorn squash is a kabocha and then I get closer… and it’s not lol. ANYWAY!!! ON TO IMPORTANT NEWS.. besides the fact that I got my laptop back ;) I got your package today!!! I was so excited when I got home from my class and saw my roommate had set out a box for moi out on the counter. Wow. I called my mom later tonight to boast about the package I got from you. I just got done having some of your homemade cookies as a nighttime snack – delicious!! Definite oatmeal topping ;) If I could make a bowl of oats taste half as good as your cookies.. I would be happy FOREVER. And the card you wrote, I’m going to put that on my fridge! So that will be part of my answer to your question. I also had a spoonful of the jam and it was so good. I think everything else you sent is going to be the no lie. I can’t wait to try the rest tomorrow! :D I love you

Right now on my fridge I’ve got crazy magnets, an envelope with grocery coupons, a picture of my old dog, and a polaroid of me and Matilda in front of an Oscar Mayer weiner mobile lol. I also have a picture of me with my mom’s family when I was a baby in Colombia and my aunt is carrying me while she’s being chased by white ducks. Let’s see.. there’s also a shopping-list notepad. OH! And a postcard I got when I was in London of those awesome old-fashioned taxis they have there.

Hm.. favorite dinner so far this week?? Maybe yesterday’s. I made a bomb-ass sandwich and sautéed the last of my kale in sesame oil and toasted sesame seeds.

Mi amiga! Te echo de menos!! This post just convinced me not to go down the whole cream of wheat route (I was contemplating… but why fix it [it being oats and OBreezy] and also to reintroduce yogurt raisins to my life. It has been WAY too long :(

Anywho my fridge currently has close to nada–an Annie’s magnet haha and I think a take out menu?–por que is muy nueva.

Best dinner was definitely last night’s fish because I’ve been without since entering el mundo of no kitchens–plus I didnt have to make it :)

Holly, am I on crack? I clicked over to a post in my reader and it’s not actually on your page??? It was the songs one…I was going to tell you I love that one night in Bangkok song–it;’s just so catchy!

All my dinners have been kind of lame this week because I’ve been working late, but hubs and I DID go get fro you last night, so that was a good one :)

Heyyyyyy. Glad you got a night off- you totally deserve it. You’ve been working like a mad woman! Oh gosh- I love apples. I went to WFs yesterday and got a bundle of different varieties and I am in apple heaven. Whats on my fridge? A lot of save the dates :) I also have a bulletin board nearby that has my race numbers, pictures of my niece, pictures of Josh & I and Frank and funny bulldog cards I have received. My favorite dinner so far this week: by far the roasted brussels, jicama, and apple with almonds and cheese that I had last night. I am dreaming about it…and may end up having almost the same dinner tonight.
