*ahem* I mean: The well-endowed fates.

Anyways, that’s what I am chalking this day up to.  Because clearly, there is no other rational explanation besides relying on ancient Greek mythologies to explain what happens in your life. When weird things happen, it’s the only explanation, no?

It all started with le foodie français. Me? Turning French? Overnight? But I speak Spanish!

As if the fates themselves were personally trying to screw with me, I then ran 7 1/2 miles at 7:30am this morning! I wouldn’t lie about something like this.  Who am I?  I can barely get up for work by 7:30am!  I chalk this up to one thing: my running buddy Kristie. Take that fates.

The weirdness continued with a seemingly innocent looking bowl of post-run oatmeal…

1/2 cup oats
1 cup water
1 egg (whisked in)
pinch of salt
1 small smashed banana
1 packet NuNaturals stevia
cinnamon
Nuttzo
1/2 crumbled PB blondie

But what’s so out of the ordinary about that bowl? It looks like just about every other I’ve consumed this week, right?

One word: COFFEE.

Two words: NO COFFEE.

Three words: THIS ISN’T ACCEPTABLE.

Four words: HOLLY WAS NOT HAPPY.

Lunch wasn’t TOO out of the ordinary; however, it did feature a new foodie item added to my repertoire today. Can you guess what it is?

This one is kind of a trick question.  It’s the hummus!  But not just any hummus, Roasted Shallot Ranch Hummus!

In a food processor, I mixed 1 cup chickpeas, 1 tbsp. tahini, a couple of glugs EVOO, 2 shallots (roasted in EVOO + salt @ 350), 1 pkg. Hidden Valley Ranch Mix and a pinch of salt.  Delicious.

I also spent money today.

That may seem like an innocent statement, but I’m really trying to cutback this month to save some $$$.  However, after running this morning and feeling my knees tweak (which happens when I need new shoes), I knew it was time to take the plunge.  Plus, the shoes I was wearing were the same ones from my marathon in October. Bad runner Holly, bad runner.

And they’re pink. Chosen by the fates clearly, because pink is definitely not my style.

Also out of the ordinary? Reading my new Women’s Health mag in bed while munching on cereal.

Then I took an 1 1/2 long nap. For the record, THIS NEVER HAPPENS.  I don’t take naps.  The fates have seriously screwed with my body clock on this one.  *shaking fist*

Dinner was also an unusual inspiration…Spinach + Pasta Frittata!

Pasta + eggs? Never had I ever.

Good thing the fates took care of that one for me.

Spinach + Pasta Frittata

1 tbsp. EVOO
1 tbsp. garlic, minced
1 medium onion, sliced
2 cups baby spinach
2 servings (4 oz.) whole wheat penne pasta, cooked until al dente
5 eggs, whisked
salt + pepper
crushed red pepper flakes
1/4 cup grated gruyere cheese

Set your broiler to low.

In a medium saucepan, heat the olive oil and garlic over medium heat.  Add the onion, and cook until tender.  Add the spinach, cooking until it wilts.  Then add the pasta and mix well, making sure you make an even layer of the mixture in the saucepan.  Pour the eggs over and let cook for 5-7 minutes.

Once the bottom is cooked, sprinkle the top with salt and crushed red pepper to taste.  Then, place the saucepan under the broiler and let sit until the egg is cooking through.  Take the saucepan out, and sprinkled the cheese over the frittata.  Place under the broiler again, and cook until the cheese is lightly browned.

Serves 4

It’s 9:54pm, and I am freakishly awake.

One thing that’s completely and totally ordinary? This blondie.

Clearly, the fates are no longer in control.

and the runing shoes are imperative. when my shoes get 300-400 miles which happens quickly actually b/c i go for long walks with skylar but yeah anyway i get knee/foot pains and then i know to replace. saving money at all costs just aint worth it!

Thanks for the email today..it meant soo much :) you’re awesome and yes, baby steps with the cutting back. And I am so glad we have an adult understanding about commenting/reading and that life comes first and stealth reading or not reading at all, totally happens.

Way to rock the run this AM! I really am enjoying experimenting with new hummus flavors. I just got some from the local food store that is cilantro and jalapeno. Yay for pretty pink shoes!! My workout outfit this morning: pink running skirt, white tank, white and pink nike shoes. Thankfully the only one who saw me was my husband. Everyone at the gym might have thrown up on me :)

That pasta/egg fritatta looks perfect! A certian husband of mine would bow down to me if I made that. I’ll be sure to give you the credit. :-) Also – I have (and LOVE) three pairs of those running shoes. Aaaand love your early morning run..whohoo! Doesn’t it feel good to just be DONE with it?? I think so…

YES. I am sooo not a pink girl either. In fact, I have forbid the colour pink from being anywhere near my road bike. There is nothing badass about pink ;)

And double YES for a long run at the buttcrack of dawn on the weekend! I’m seriously impressed.

Hey BTW thanks for pointing me to coconut oil spray. I’ve been having fun with it. It really made my roasted asparagus taste dynomite!
