Overscheduled + Underpaid

Anybody else with me on this? Let’s stand up to the man!

Okay, so maybe I am being a slight drama queen, but for reals – does anybody else overcommit themselves and suddenly have a bajlillion things to do? I guess I could breakdown into a drug habit and ruin my career a la Lindsay Lohan, so maybe I am handling the stress better than I realized…

1/2 cup oats
equal parts skim milk + 0% Fage + POM juice
1 tbsp. shredded coconut
(soaked overnight)
1/4 cup Optimum Slim Blueberry Cinnamon cereal
3 quartered black mission figs
dollop o’ raw AB

Since it will be a late night, there is going to be minimal commentary this evening.  Plus, with food like this, no words are needed quite frankly…

2 slices toasted spelt bread
1/4 cup mashed black beans (sprinkled w/ cumin + garlic powder)
sliced red pepper
baby spinach
1/2 mashed avocado

When I arrived back at the flat after a busy day of worksky, I found these darlings at my doorstep!

Thank you to Emily and the folks at Food Should Taste Good for offering to send me some samples of their products!  I’ve only tried the Sweet Potato flavor of these chips, so you can imagine my utter joyfulness when I took a look at the flavors they sent along: Cinnamon, Lime, Potato + Chive and Corn.

Ummm…are they stalking me and my blog? I am pretty sure they couldn’t have picked 4 more perfect flavors.

A little bit about the chips…

  • All-natural
  • Gluten-free
  • Kosher
  • Lactose-free
  • No MSG or preservatives
  • Trans fat and cholesterol free

I am liking the sound of these.  However, I am liking the looks even better…

But the taste, yes; the taste was the best.  The Cinnamon chips reminded me of a churro.  You know those long tubes of cinnamon sugar goodness?

They were the perfect sweet complement to a spiced Indian dinner…

Alright kiddos, I am off on a writing frenzy.  I am even skipping my 10 mile run tonight.  Grrrrr…that’s how much stuff I have to do.  With a couple deadlines looming, I need to go create some fantastic freelance fodder and wonderful witty writing.  Peace out.

P.S. If you see me comment on your blog tonight, send me an e-mailing yelling at me to get back to work.  Thank you.

P.P.S. Shoutout to my girl Alison for whipping up some of Granny Everythingtarian’s Banana Bread!

What is one thing on your to-do list today? My major one is the freelance writing mentioned above!

A chip that tastes like a churro? Heaven!

Stacy’s Pita Chips in cinnamon sugar have a similar taste. I can’t keep an open bag by me, otherwise they will be GONE!

Jess September 9, 2009 at 7:25 pm

YAY for packages!

Evan Thomas September 9, 2009 at 7:33 pm

I way overcommit myself. I feel like if I don’t have 12 things going, though, I’m not being productive enough.
I loved the cinnamon ones, too. They tasted like a freshly fried dessert, but you can sort of kind of convince yourself they’re just a chip and there’s still room for dessert

Matt September 9, 2009 at 7:43 pm

Yeah I overcommit myself as well. I ended up working a six hour shift today and I still have a ton of homework to do. Why am I on here? Lol.

Katie September 9, 2009 at 8:38 pm

I’m with you on the overcommiting thing. Also, I need to try figs and the avocado on your sandwich is calling out to me. So yums.

Gliding Calm September 9, 2009 at 8:40 pm

I think you eat some of the yummiest and prettiest eats out of everyone i know!!

Figs in cereal!
Indian food!!
Black bean and cado sammys!!!
Chips and Jammy Sammys (are those good btw?)!!

YUMMMMMMM.

I’m sorry you feel over extended. Get some rest tonight mama!! I lovez youuuu!

Whit September 9, 2009 at 9:01 pm

It’s the short week. I swear it’s getting to me too. Luckily my boss and I had a little meeting, and lets just say that my most annoying coworker? He ain’t gonna be annoying me anymore. Love my boss.

Andrea@WellnessNotes September 9, 2009 at 9:39 pm

Hope your week slows down a bit… I feel quite overwhelmed myself these days…

Your figs look soooo good! I stopped buying them since my “fig habit” was getting a bit too expensive… But now I really want some…

I also made your banana bread, but I was short by one banana so I didn’t follow the recipe exactly (but do I ever??!!?). It still turned out great! It’s been toddler, teenager & hubby approved! :)

Tay September 9, 2009 at 10:09 pm

Sweet chip selection! I want to try all those! And aren’t fresh figs the best? I’ve actually never had dried ones – I really only eat the fresh ones! Sooooo good. Good luck with all your work!!

Lainie September 9, 2009 at 10:15 pm

overscheduled and underpaid…me, me, me!!! Ugh…it’s never-ending, I tell ya.

You are one lucky girl for getting that shipment of chips! I am DYING to try them!

Lele September 9, 2009 at 10:19 pm

Women are always underpaid! Booooo!

On the bright side, your figs with breakfast just broke my heart a little bit they were so beautiful.

Sophia September 9, 2009 at 10:47 pm

Hey, I’m a student…I PAY big bucks to be overworked and overstressed. Lol!
Hope you’ve got your work done smoothly and efficiently!

Whole Body Love September 9, 2009 at 10:50 pm

The one thing on my to do list today was to paying my tuition bill (unfortunately financial aid and loans don’t take care of all of Xavier’s monster tuition cost). So, I grudgingly made that transaction. We just bought some of those Jammy Sammies for Snuffy at Babies R Us. She tried her first one tonight and loved it!

Lynn @ The Actors Diet September 10, 2009 at 12:05 am

wow those are only 3 figs? they look like more! i can’t wait to try some of those chips….i think the sweet potato and i are going to be friends.

Nicole September 10, 2009 at 12:11 am

I hope that you got all of your stuff done that you needed to!! I had to skip my run too! My arm was way too swollen by the end of they day, and I decided to stay at home and take some Benedryl for the stupid wasp stings!!

Uncle Tommie Timbertoes September 10, 2009 at 5:25 am

Life is at its toughest when expectations are at their fullest.

Not long until the weekend! I really can’t picture you as Lohan #2 somehow ;)

I am intrigued by that strawberry jam + PB sammy! What is it?..

Paneer = awesome stuff!

Have a good Thursday- if you want me to call your boss and distract him so you can sneak out of work, am happy to do so :D

My to-do list today was a hospital appointment. Done :D

April September 10, 2009 at 8:23 am

Meredith (Pursuing Balance) September 10, 2009 at 8:37 am

I have to be careful not to overcommit myself too . . . sometimes it’s hard to say no when there’s so much you want to do! It’s all about finding balance :)

Faith September 10, 2009 at 9:33 am

Those chips look great…healthy and delicious, a rare combo in chips! You sold me on the churro. ;) Good luck with your writing!

brandi September 10, 2009 at 10:07 am

One thing on my to do list: Pack for my exercise-a-thon this weekend :)

Megan (The Runner's Kitchen) September 10, 2009 at 1:16 pm

mmm, creamy avocado sandwiched between beans and toasted bread. love it.

Alison September 10, 2009 at 2:39 pm

Ummmm yeah – hi my name is Alison and I am an overcommitment addict. I just signed myself up for something more last night too – might as well sign up for a bus ticket to the looney bin next. I am way behind, thus commenting on this post TODAY instead yesterday!

P.S. Thank you the shout out, your Granny’s banana bread totally rocked the house. There was ONE piece left and Ava gobbled it up as soon as I walked in the door with it!
