Yeah, that’s what I’m packin’ over here.
This week is already shaping up to be incredibly insane, which means it is even MORE important for me to prepare healthy, delicious meals I can grab on the go. Yesterday, I whipped up a batch of these pimped out pancakes, let em’ cool and stuffed them in the freezer.
Now, breakfast is ready for me every morning this week in less than two minutes…

Holly’s On-the-Fly Protein Pancakes
1 cup whole wheat flour
1/4 cup rolled oats
1/4 cup wheat bran
1/4 cup almond meal
2 T. stevia baking blend (or any type of sugar)
1 T. ground cinnamon
1 t. baking powder
3/4 t. salt
1/2 t. baking soda
1 cup organic skim milk
1/4 cup coconut oil
2 eggs
3 T. vanilla brown rice protein powder
Sift the first nine ingredients together in a medium-sized bowl. Mix well. Add the milk, coconut oil, eggs and protein powder. Stir the batter until everything is mixed. It will be thick and slightly lumpy.
Over medium-low heat, warm a medium-sized skillet and spray liberally with coconut oil or canola oil cooking spray. Take heaping 1/4 cup scoops of the batter, and cook the pancakes 2 to 3 at a time (depending how large your skillet is). Cook until golden brown on both sides.
Top with buttah, maple syrup, nut butter, fresh fruit, yogurt or your topping of choice. One serving size is two pancakes.
Makes 4 servings

Nutritional Stats
- 380 calories
- 20 grams of fat (fat is our friend!)
- 33 grams carbohydrates
- 7 grams fiber
- 21 grams protein
Not to mention completing a fair share of your daily requirements…38% manganese, 21% selenium, 14% magnesium, 13% calcium, 12% iron and 12% of Vitamin B-6! Word.
So, why is this week so crazy? Lemme break it down…
- Today: make major progress on my current freelance writing project (deadline: Wednesday)
- Tuesday: work late/finish freelance project (and skipping salsa class :()
- Wednesday: 7am hair fix/work all day/7pm bloggy meet-up dinner
- Thursday: work late/special foodie event (!!!)/drinks with an Everythingtarian reader
- Friday: praying I’m still alive
That’s all in addition to the usual sched, which is normally still crazy.
The one thing getting me through this week…
Finding a real life sign that spring is on its way. When I saw this lonely lil’ tulip this morning on my walk to work, it made me very happy.
That and the 7-mile run Brett + I busted out in the rain after work.
And the fact that eventually, I will get sleep tonight.
What made you happy today? Tulips, 7-mile runs, sleep and realizing Glee premieres tomorrow all made me EXTREMELY happy today!

Today, having fresh laundry made me soooo happy. I think the last time I had full drawers of laundry here was before Spring Break. It’s the little things in life.

Omg, that’s the perfect way to serve pancakes imo! I like to mix some cinnamon with some fage and dunk ‘em pancakes in that too! The weather here is going to be great all week except for Thursday supposedly. Eh, whatever! The weather channel can never predict anything anyways.

Also, I love making a big batch of pancakes and freezing the leftovers. Then, I can heat ‘em up quick during the workweek, but feel like I had a “special” breakfast! Hahaha.

Have you ever heard of Tulip Time? If you ever get a chance to visit Holland MI in the late spring (May-time), I think you would love it. There are tulips EVERYWHERE.

Glee and spring are totally my life-savers and -sustainers right now, and excitement for a great weekend ahead. I’m going to another country… Canada ;). By the way, if I had those pancakes to eat for breakfast, however, I may have jumped out of bed in foodie delight, however, those look amazing. Best of luck with everything my darling!

Well I suppose I should base this on yesterday when you wrote this…also yesterday was awesome. Things that made me happy: yoga (getting into wheel from flipped dog for the first time…and then falling on my arse hard), my first ever roller skating class (YES that is what I said. I will be the next whip it girl) and sleeping through thunderstorms with a boy and some kittens at my side…cosy to say the least.
LOVE the look of those pancakes girl and freezing them for weeklong brekkies: such a brainy idea. If only I had a microwave…

when i was a kid my mom and i would make chocolate chip pancakes and freeze them for easy breakfasts, because i didnt like cereal. or sandwiches. how she raised me? i’ll never know.
