Protein Pancake Punch

Yeah, that’s what I’m packin’ over here.

This week is already shaping up to be incredibly insane, which means it is even MORE important for me to prepare healthy, delicious meals I can grab on the go.  Yesterday, I whipped up a batch of these pimped out pancakes, let em’ cool and stuffed them in the freezer.

Now, breakfast is ready for me every morning this week in less than two minutes…

Holly’s On-the-Fly Protein Pancakes

1 cup whole wheat flour
1/4 cup rolled oats
1/4 cup wheat bran
1/4 cup almond meal
2 T. stevia baking blend (or any type of sugar)
1 T. ground cinnamon
1 t. baking powder
3/4 t. salt
1/2 t. baking soda
1 cup organic skim milk
1/4 cup coconut oil
2 eggs
3 T. vanilla brown rice protein powder

Sift the first nine ingredients together in a medium-sized bowl.  Mix well.  Add the milk, coconut oil, eggs and protein powder. Stir the batter until everything is mixed.  It will be thick and slightly lumpy.

Over medium-low heat, warm a medium-sized skillet and spray liberally with coconut oil or canola oil cooking spray.  Take heaping 1/4 cup scoops of the batter, and cook the pancakes 2 to 3 at a time (depending how large your skillet is).  Cook until golden brown on both sides.

Top with buttah, maple syrup, nut butter, fresh fruit, yogurt or your topping of choice.  One serving size is two pancakes.

Makes 4 servings

So, why is this week so crazy? Lemme break it down…

  • Today: make major progress on my current freelance writing project (deadline: Wednesday)
  • Tuesday: work late/finish freelance project (and skipping salsa class :()
  • Wednesday: 7am hair fix/work all day/7pm bloggy meet-up dinner
  • Thursday: work late/special foodie event (!!!)/drinks with an Everythingtarian reader
  • Friday: praying I’m still alive

That’s all in addition to the usual sched, which is normally still crazy.

The one thing getting me through this week…

Finding a real life sign that spring is on its way. When I saw this lonely lil’ tulip this morning on my walk to work, it made me very happy.

That and the 7-mile run Brett + I busted out in the rain after work.

And the fact that eventually, I will get sleep tonight.

What made you happy today? Tulips, 7-mile runs, sleep and realizing Glee premieres tomorrow all made me EXTREMELY happy today!

A solid stretch-filled yoga session! Ahhhhh….

After reading all these blogs, I realize I need to start making more pancakes.

Evan Thomas April 12, 2010 at 8:36 pm

Those pancakes sound stick-to-your-rib good! Good luck with your week
Today, having fresh laundry made me soooo happy. I think the last time I had full drawers of laundry here was before Spring Break. It’s the little things in life.

Lauren April 12, 2010 at 8:38 pm

Any day that starts with pancakes is sure to be fantastic! :)

What a great week ahead of you!!! I can’t wait to read all about it.

i shopped at trader joe’s today – always makes me happy!

jperonto April 12, 2010 at 10:16 pm

Omg, that’s the perfect way to serve pancakes imo! I like to mix some cinnamon with some fage and dunk ’em pancakes in that too! The weather here is going to be great all week except for Thursday supposedly. Eh, whatever! The weather channel can never predict anything anyways.

Taking a 4 mile walk. Felt so good on my legs!

Also, I love making a big batch of pancakes and freezing the leftovers. Then, I can heat ’em up quick during the workweek, but feel like I had a “special” breakfast! Hahaha.

Mama Pea April 12, 2010 at 11:50 pm

Your email made me happy today. I’m sorry I haven’t had a chance to respond (so busy…exciting things are going on…), but I peed my pants during that whole SNL episode. Please tell me you saw Brownie Husband. I’ve been smiling about that all day.

Killian April 12, 2010 at 11:59 pm

Starbucks Grande Soy Cappuccinos, new chinos from Gap, spontaneous hugs from my Mum, they’re the things that make me happy :)

Have you ever heard of Tulip Time? If you ever get a chance to visit Holland MI in the late spring (May-time), I think you would love it. There are tulips EVERYWHERE.

Chelsea @ (Chelsea's Chew and Run Fun) April 13, 2010 at 5:44 am

Ohhhh, those pancakes look insanely delicious. Thank you for sharing the recipe!

Since today hasn’t really begun, I’m just going to list something that made me happy yesterday: getting my computer fixed at the Apple Store!

Danielle April 13, 2010 at 7:27 am

Glee and spring are totally my life-savers and -sustainers right now, and excitement for a great weekend ahead. I’m going to another country… Canada ;). By the way, if I had those pancakes to eat for breakfast, however, I may have jumped out of bed in foodie delight, however, those look amazing. Best of luck with everything my darling!

Kacy April 13, 2010 at 8:42 am

Whew girl, good luck with your week! At least it’s full of some fun busy stuff as well, yes?

Your pancakes look divine! I don’t know why I don’t make them more often.

My coffee was extra delicious this morning (used full fat half and half, fat IS my friend). That made me happy.

Heather Eats Almond Butter April 13, 2010 at 8:48 am

Brilliant to make all the pancakes ahead of time and freeze them. The next time someone tells me they don’t have time for pancakes, I’m directing them to this post!

Loved the tulip photo – that made me happy too. So ready for spring and some sunshine in my life. You’ll make it through this week – you will, fueled by pancakes and fat, no doubt…two of my favorite things. ;)

runnerforever April 13, 2010 at 9:17 am

I love how you included the nutrition facts for the pancakes, they look fantastic!

Emma April 13, 2010 at 9:27 am

I recently have been given the task of compiling health book newsletters for subscribing patrons at my library (I’m nearly a professional librarian… 1 1/4 semesters!). I need help! I thought, “Who better to turn to than all the wonderful health bloggers out there?!” If you have any suggestions for me, pleases check out this post and leave a comment:

Thanks so much!

PS: Glee makes me SO HAPPY!

elise April 13, 2010 at 9:50 am

sooo excited for glee!!!

Angharad April 13, 2010 at 9:54 am

Well I suppose I should base this on yesterday when you wrote this…also yesterday was awesome. Things that made me happy: yoga (getting into wheel from flipped dog for the first time…and then falling on my arse hard), my first ever roller skating class (YES that is what I said. I will be the next whip it girl) and sleeping through thunderstorms with a boy and some kittens at my side…cosy to say the least.

LOVE the look of those pancakes girl and freezing them for weeklong brekkies: such a brainy idea. If only I had a microwave…

Enjoy your day and stay stress-free!

samantha April 13, 2010 at 10:03 am

well since today is tuesday….

GLEE! a gloomy day (all the better to go home and get things done). the coffee i’m currently drinking, and my lime green boat shoes!

when i was a kid my mom and i would make chocolate chip pancakes and freeze them for easy breakfasts, because i didnt like cereal. or sandwiches. how she raised me? i’ll never know.

April April 13, 2010 at 10:56 am

Susan April 13, 2010 at 11:42 am

Aaahh, I still have the last two episodes of Glee on my computer that I haven’t watched yet!! I’m awful at keeping up with TV.

That tulip picture is so cute!! Best part of Monday was coming home to a happy poodle :D Will probably be my happiest part of today too!

Can’t wait to see this foodie event…

Diana @ frontyardfoodie April 13, 2010 at 11:59 am

Wow that’s gonna be a crazy good tulip patch! Talk about packed in there.

Tulips are raging here right now so I can visualize.

Maura April 13, 2010 at 12:55 pm

Love the tulip picture. It legit made me laugh out loud – which might mean I’ve gone slightly insane at work today. Anyway, I digress. What made me happy today was gchatting with my girlfriend about her upcoming wedding & a spontaneous lunch with my mom. Good luck with your busy schedule!!!

Kailey (SnackFace) April 13, 2010 at 1:05 pm

GLEEEEEE!!!!!!! Muffin and I will be revamping my resume and Glee-ing it up tonight. I cannot wait!!!

Mel April 13, 2010 at 8:26 pm

Those pancakes look amazing!

By chance, is this special foodie thing on Thursday involve two things that our state is famous for? Coz if it is, I will be there too!

Katie April 14, 2010 at 6:10 pm

I reallllllly need to make pancakes and store them for the week…I’ve done it before but I just can rarely never get my lazy butt to prepare ahead of time.

Happy today: sunshine, yummy food, cute outfit
