Easy Vegan Chili

2 T EVOO
1 T minced garlic
1 (12-oz.) bag frozen diced onion
1/2 (12-oz.) bag frozen green peppers
1 bag Morningstar Grillers’ Veggie Crumbles (or substitute 1 block crumbled tempeh, or 3 crumbled Original Sunshine Burgers)
3 (15-oz.) cans diced tomatoes
1 (15-oz.) can tomato sauce
1 (15-oz.) can black beans
1 (15-oz.) can garbanzo beans
1 (15-oz.) red kidney beans
1 – 2 packets organic mild chili seasoning, to taste*

Over medium, heat the EVOO + garlic until fragrant.  Add the onions, green peppers and veggie crumbles, and cook for 5-7 minutes, until heated through.  Add the tomatoes, beans and seasoning.  Reduce the heat to low, and let simmer for 1-3 hours. Stir occasionally.  The longer it simmers, the more time the flavors will have to meld, resulting in a tastier chili!

Serve with the garnishes of your choice: Saltine crackers, cheese, sour cream, green onion, tabasco, etc.
