the good news first

by Holly on January 6, 2011

in dinner,giving back

I hate it when people say, “I’ve got good news, and I’ve got bad news. Which do you want first?”

I mean, does it really matter which one? Because (a) if you get the bad news first, you can’t fully appreciate the good news because your mind is still dwelling on the fact your skirt was tucked into your tights, and your boss saw your white granny panties in all their high-waisted glory (true story), and (b) if you get the good news first, the fact you just got a much-appreciated raise is completely overshadowed by said granny panty peek (again, true story).

If I had to pick however, I like the good news first.

Because even if there is bad news to come, it makes it easier to bypass knowing the good news is already here. I don’t know if that makes any sense, but let’s just go with it.

The good news.

We raised more than $1,850 to support Jovenes en Camino orphanage in Honduras {!!!}.

Thank you to Brandi, YOU, friends, family, Twitter, Facebook and e-mail for helping contribute to + spread the word on this amazing collaboration and raising almost twice our goal to give much-needed money to these Honduran children. It truly IS the best news.

If you would still like to donate and help us make it $2,000, click here.

More good news.

I have an incredibly delicious new food obsession…

Saute 3 cups spinach in 1 T olive oil + 1 T minced garlic. Add two eggs and scramble. When the eggs are finished, add a handful of shredded mozzarella and scramble one last time. Sprinkle with salt, pepper + pinch of red pepper flakes. Serve over a steamed sweet potato.

Finish the meal off with a generous 1/2 cup serving of cocoa-roasted almonds for dessert.

Now…the bad news.

My running partner, VLOG director and friend Brett is moving.

My most frequent guest poster is moving two hours away, and while I am incredibly sad not to be able to see him everyday, I made him promise he will write more guest posts for me. Please wish Brett well in his new job, which is truly going to make a difference and help LOTS of people.

So the good news remains I’ve already given you the good news, so you may just be able to concentrate on that amazing amount of money ($1,850!!!) or delicious cup of almonds and forget one of my bestest Madison friends is moving 140 miles away from me next week.

I still don’t know if that makes any sense, but it’s worth a shot, right?

janetha @ meals and moves January 7, 2011 at 12:05 am

well, all the more reason for you to move to salt lake. right?

Averie (LoveVeggiesAndYoga) January 7, 2011 at 12:14 am

140 miles is nothing! Totally drive-able and you can meetup halfway type thing a couple times a month, not ideal but do-able..that’s the silver lining. Sorry to try to be all cheery but just trying to cheer you up :)

the cocoa-roasted almonds, NICE!
and i love your jam packed sweet tater!! yum!

Emily January 7, 2011 at 12:20 am

awww sad…I mean worst case scenario you guys can train separately and run to see each other, right? haha. Also, I’m drooling over that potato – how do you think of such a thing…I didn’t get more creative than Fruit by the Foot and vino tonight…yeah it’s been one of those weeks. lots of love, E.

Eden January 7, 2011 at 1:09 am

I know it sounds weird, but I’m closer to my long distance friends. I appreciate the time I spend with them because they are precious.
Is that a new wall paper in the “lightbox”? I love it (and the potato, of course).
And yay for raising the money! You are like a fairy godmother to those children.

VeggieGirl January 7, 2011 at 5:25 am

Oooh I want to try your food obsession! Yum.

Too bad about your friend :( But hey, just keep in touch as much as possible!

Katie January 7, 2011 at 5:28 am

SO happy you got alot of money raised! That is great news for sure!!

That stinks about your friend moving : ( I know thats hard, you will just have to take road trips to see him!

Love you holly! xoxo

p.s. your new food obsession looks Amazing!

Lauren January 7, 2011 at 5:46 am

Awwwwww, sad!!! But you’re right, showing the good news really did make the bad news seem more bearable. As cute as Brett is, I still have visions of that sweet potato in my head. ;)

chelsey @ clean eating chelsey January 7, 2011 at 6:28 am

Wooohoo for the good news!

Matt January 7, 2011 at 6:40 am

Great news!

Erica January 7, 2011 at 6:47 am

Awww bummer about the move :( But maybe it will give you two an opportunity to travel and see each other and explore his new home? I usually cook up chopped sweet potatoes and then add it to my eggs. I will definitely try putting my eggs on top of a baked/micro’d sweet potato. Great idea

Little Bookworm January 7, 2011 at 6:53 am

Love the sound of the new food obsession! Sorry about your friend moving though.

Sarah January 7, 2011 at 7:39 am

I’m just joining the party over here, and I’m sorry to hear your bad news! I know how you feel- my sister recently moved many states away, and my brother will in a few months (I’m close to both of them.)
I really admire what you’re doing in Honduras. And that potato? Well, I think I’m going to copy that idea.

Nelly January 7, 2011 at 7:39 am

Eggs and sweet potato? Bwuh? O_o This sounds just crazy enough to work. And it’s actually something I can eat, so yay! :D

Best of luck to both you and Brett! LDRs of any kind (romantic, platonic, whatever) really, really suck. Keep in contact any way you can – phone calls at lunch, Skype at 3am, emails, texts, etc etc. And I’m gonna second the suggestion to meet up halfway – that way it’s an adventure for both of you!

Sami January 7, 2011 at 7:53 am

i think i will be trying this sweet potato concoction you speak of! how does it get any better than eggs, spinach, and cheese?! add a sweet tater!

Maren January 7, 2011 at 8:18 am

I am so sorry to hear that your friend is moving :( At least you can always make that trip in a day or a weekend :) Also, congrats on the money for Honduras! oh and that meal is to die for. I may be making that for breakfast tomorrow :)

brandi January 7, 2011 at 8:49 am

Wahoo for all the good news!!!! :) And I need that potato dish now.

So sad that Brett is moving – I”m sure you guys will find time to hang out. At least isn’t not 10 hours away!

Evan Thomas January 7, 2011 at 8:54 am

I want that lunch in my life.
And good luck to Brett!

Angharad January 7, 2011 at 8:58 am

Oh pickle! I’m sorry Brett is moving! Congrats on reaching such an awesome number of donations!
I’m back, by the way…when are you next in town? I would recommend not next weekend. Apparently we’re getting the coldest temps in 15 years with a HIGH of -25. fml.

Hearts! xx

Carbzilla January 7, 2011 at 9:09 am

Yay and Boo but one more place for a road trip!

Katie January 7, 2011 at 9:18 am

Yum! I love eggs and sweet potato!

Jenny January 7, 2011 at 9:45 am

aw, I’m so sorry to hear about Brett’s departure. Perhaps you can convince him to stay if you promise to make him that sweet potato and egg scramble combo every day for the rest of his life. The way to a man’s heart is through his stomach, after all.

On a happier note, congrats on the donations Holly! I am SO proud of you and hope you realize what a positive impact you have on the world. You change lives! How amazing is it to be able to say that?!!?

Kacy January 7, 2011 at 10:27 am

I love how you support things beyond yourself. I am so happy that you and Brandi were able to raise so much money. What a deserving cause!

Madeline - Greens and Jeans January 7, 2011 at 10:27 am

My best gal lives two hours away and I get to see her WAY more than I would expect! Some long distance relationships have legs girl! :)

Diana @ frontyardfoodie January 7, 2011 at 10:51 am

hahahaha, pantie story visual is priceless……

Sorry your friend is moving away! I hate when that happens. It’s even worse when it’s a sister which happened to me so I feel ya.

Megan (Braise the Roof) January 7, 2011 at 10:57 am

Last year, my best friend moved all the way to Australia. Rude, isn’t it!? :) Thank goodness for all things chocolate covered- they soothe all ills.

Ashey @ 365things January 7, 2011 at 12:17 pm

That’s so sad about your friend moving away. :( At least he’s not going TOO far away.

That tater looks delicious. I’m def going to make one soon!

I love your blog btw. Its one of my favorites. I save yours and a couple others as the last ones I read, ya know, save the best for last. :)

julie January 7, 2011 at 1:34 pm

Sad that Brett is moving, but i look forward to his future guest posts!

Clare @ Fitting It All IN January 7, 2011 at 2:48 pm

Seriously, how have I never thought of eggs on a sweet potato before. You are genius.

Lisa @ Thrive Style January 7, 2011 at 2:51 pm

The sweet potato egg dish looks so awesome! I wouldn’t have thought of that combo, but it appears to work well :)

Sorry your friend is moving…that stinks for you.

I just found your blog—I’m looking forward to reading more!

Mary @ Bites and Bliss January 7, 2011 at 6:11 pm

congratulations on raising all that money!! That’s amazing! :) And the sweet potato looks absolutely delicious. I love added savory bites to sweet potatoes, they’re such a good pairing. Sorry to hear about your friendsmoving, though. Enjoy the time he’s there while you can.

Mary January 7, 2011 at 6:18 pm

I just made this for dinner tonight– yum! So good! And quick and easy too, which is always a bonus :)

Katie January 7, 2011 at 6:26 pm

That eggy spinach sweet potatOE looks unbelievable. And will be recreated in the LVP household soon. (The rotten SPs have been tossed.)

So, so sorry Brett is moving. But on the upside, it’s more of an excuse for you to travel!

Congrats on reaching your fundraising goal, ladylove.

BroccoliHut January 7, 2011 at 8:00 pm

Loving the looks of that food obsession. Sweet potatoes and greens always taste good together, so a little egg action can’t hurt!
