It’s really the little things that make me happy.
But not just any sandwich…a turkey + hummus + cheese + mustard + toasted Ezekiel bread sandwich. And not just any apple…an apple sprinkled with Apple Pie Spice (see below).
Shopping. It’s simplicity at its finest. Hand over the cash, and you shall receive your items.
The clothing items were purchased with moi money – a pair of brown calf-length boots, black and white pencil skirt (with an elastic waistband – PERFECT for Thanksgiving!) and a Helly Hansen winter jacket – at my and this girl’s fave store, TJMaxx. The food items were graciously purchased by Mama & Papa Everythingtarian at the local grocery store.
Hearty, delicious and easy…it was Homemade Vegan Chili for dinner!
This morning, it was some Honey Banana Graham Oatmeal.
1/3 cup rolled oats
1/3 cup skim milk + 1/3 cup water
1 small smooshed naner
pumpkin pie spice + cinnamon
drizzle of cinnamon maple syrup
crushed Annie’s Honey Bunnies
1 hearty spoonful Bee’s Knees PB
How can you not love a rando simple bowl of oatmeal?
After a relaxing weekend at home full of couch potatoing, movie + America’s Next Top Model marathon watching (one of the true little things I j’adore), cooking and sleeping, it was unfortunately time to hit the road back home.

When I arrived back at my flat (yes, I hope that if I say it enough I will turn British one day), I unpacked, organized and then hit the lake path for a 4 mile run. Besides the motherf&#^!*@ wind, it felt good to get the lungs going again.
And return home to this…

Have I mentioned how much I love POM? Because I do. I think I may like the POM Kiwi blend better, but I literally have not met a POM juice I did not like. Again, it’s the little things.
Dinner was inspired by the very first blog I ever read – Good Things Catered! Katie is an AMAZING cook with fun recipes and festive parties too (secretly, I obv want to be her). One of my favorites is her Sweet Potato Black Bean Burritos…
They are amazingly delicious and cheap to make – which is muy importante since I def spent a good chunk o’ change shopping this weekend (*cough* look above).
Now I am sipping some Pumpkin Spice Tea and contemplating a bowl of homemade pumpkin yogurt, perhaps topped with some more nut butter. Simple, no?

- In case you are wondering, my mom and sister weren’t exactly eager to have their pics taken for yesterday’s pancake review, but they were champs for the sake of the blog! Love them.
