Ginger-Soy Asparagus with Poached Eggs & Wasabi Soy Almonds

Kick your Sunday off right friends.

For me, that means leaving for a week-long vacation with my manfriend. We’re heading up north for a week of relaxation, which is going to involve camping, (lots of) eating and exploring the pristine coastline of Lake Michigan. I’m turning off my phone and forgetting all about work and taking these next seven days to do as little as humanly possible (minus reading trashy magazines).

What are YOU up to today? I hope it involves cooking since I seem to be seriously lacking in that department lately. The only meals I seem to make are bagels topped with eggs + Frank’s Red Hot and this dish, which I’ve made four times. It’s simple. Roast a big bunch of asparagus in a drizzle of olive oil, tablespoon of soy sauce, teaspoon freshly grated ginger and a pinch of salt + pepper. Top with two poached eggs and crushed Blue Diamond wasabi + soy sauce almonds.

Eat for breakfast, lunch or dinner and preferably with good reading material. May I suggest a few?

With that, I’m grabbing my hiking shoes, swimsuit, sleeping bag, camera, a case of PBR, two books, road trip snacks and a big bottle of SPF, and we are outta here.

Hate to be the Debbie Downer, but when was the last time that this site had original, UN-SPONSORED content. I’ve been following for years but it seems almost humorous how there is always a brand name drop in every post. I follow enough blogs that I understand a weekly/pick your frequency blog post, but I don’t watch tv shows that are all commercials and I don’t read blogs that are all ad content either.

I love that “Cult of Busy” article, especially this line: “Feel more joy. Learn how to do less. Stop spreading yourself so thin by saying “no” more, by saying “no” to being busy, and by meaning “yes” more fully.”

Thanks for your comment! I totally agree. I feel as though I have been putting up too many sponsored posts in a row lately and have been trying to rectify that. Life has gotten busy with more freelance graphic design work than I imagined, which has left me just struggling to write the blog posts that I had committed to months ago for products / local services. However, I do have a plan of action for that, so I hope you will continue to keep reading for some fresh content.

And just to clarify, the only time a post is sponsored is if I have put a disclaimer at the bottom of the post. For this specific post, I just happen to have bought those almonds and made that dish with those almonds, which gave it a total kick of flavor I enjoyed.
