I have to say, I’m definitely feeling especially quite gypsy-like these past couple weeks.  Between all these weekend getaways, running here and there, barely having time to get all my ish done (much less train for a marathon!) and workin’ the 9-5, this gal wants nothing more than to put on a headscarf and bejeweled sarong, sing “Gypsies, Tramps and Thieves,” and dance my way to Europe.  Ahhhhh….if only….

It’s probably a good thing that it was only the “Men Tell All” for The Bachelorette tonight.  My to-do list is a gazillion things long and watching pointless, dramatic, trashy reality TV that’s totally awesome can wait another week.

Breakfast was a bowl of Overnight Oat Bran a la Snackface

1/3 cup oat bran
1 (4-oz) container Yo Baby Pear yogurt
1/3 cup skim milk
1 sliced naner

(soaked overnight)

1/4 cup blueberries
1/4 cup Zoe’s Honey + Almond granola
blob o’ AB

Then I ate my afternoon snack mid-morning because I was feelin’ snacky (to the tune of “Bossy,” of course) – Zoe’s Peanut Butter bar with PB frosting and topped with a flair of creativity…

Last week, I went administrative assistant turned nutrition counselor when Bryan, one of my co-workers, needed a dessert recipe that was chocolate & dairy-free for a BBQ he was heading to.  After a bit of scouring, I found a recipe for Lemonade Cupcakes from MyRecipes.  FYI: the recipe is not remotely healthy – it’s a BBQ people!

Well, Senor Bryan saved me a cupcake from the weekend since I gave him the ingenius recipe.  Turn down a cupcake?  Virtually never.

I also heart cupcakes.

I also heart cupcakes (even if it's just 1/2).

Some berry love munched on while running lunchtime errands…

Warning: most rando salad combo eva ahead!  Weirdly enough, some of the strangest combos seem to be the most satisfying…hmmm…I might have to raise the eccentric stakes for next salad…

baby spinach
cauliflower/broc/carrot mix
1 box raisins
TJ’s AB+PB+J trail mix
Newman’s Sesame Ginger Vinaigrette

Dindin was quite glorious, if I do say so myself. Let’s just call it healthified Eggplant Parmesan!

Two slices toasted Ezek, 2 Dominex Eggplant Cutlets, marinara sauce + sprinkle of Swiss cheese = HOLY YUM.

...finished up with a lil' AB+PB+J+chocolate chips trail mix foe somethin' sweet.

I was most def about 7 months preggers after this meal.  However, I didn’t feel gross full – just contently full of delicious, nutritious and fabulous eats.

Finishing up the night, I headed out for a 6-mile run, which I finished in just under an hour.  Since my marathon training is a bit off (due to the past week’s vacay getaways), I am planning my long 12 mile run for tomorrow (to make up for the weekend), taking Wednesday or Thursday off, then hopefully resuming the norm Hal Higdon plan.

Gotta go take care of my cousin’s beast of a dog – pics to come tomorrow.  Seriously dudes…Angus (the dog) is a BEAST!

Ace idea! Let’s do it. Friday works best for me although I do have my 10K Saturday a.m. so I can’t get buck wild (I know you were planning to, don’t lie). Are you working or free all day?

If you’re free lunchtime we could go to Lucia’s To Go – ever been? They have awesome salads and sandwiches and the yummiest vegan chilli ever. And a cute lil patio.

If it’s to be after work I would be down for a walk round one of the lakes or coffee or a quick bite…Aldrich and Lake puts you right by Bryant Lake Bowl, no?

Lemme know your thoughts….and good work on getting a run in before this downpour!!

I vote “YES” to dancing to Europe…more specifically, Scotland. We can eat cupcakes and crazy salads together and party like it’s 1999?

ahh i am loving the name tag, everyone better back up off that bar! lemonade cupcakes? holy moly. those look divine! and sound refreshing, a nice change from all the rich flavored cupcakes out there. i dont know if i should or shouldnt click that link though…ok i clicked on it. shit.

Overnight oat bran is total yum! I’ve only recently tried it and me likey.

Ahhh…theres so much good stuff going on in this post.

Major yum to your breakfast! I have yet to make overnight oats this year, but once it starts warming up I’ll be all over it. :)

I’m a huge fan of all things lemon, so the lemonade cupcakes sound (and look) amazing.

AND, last, but not least, the egglplant parmesan really caught my eye. Can you believe I’ve never tried it before? I need to make some!

That eggplant parm look sooo good! I love eggplant and thinking up new ways to use it is delish. have you ever tried just grilling it with salt and pepper and EVOO? so good! I hope your long run goes well. i begin my training soon. i’m so scared! ahh!
