(1) I thought it was the perfect time to roast my very first chicken while sick yesterday.

And it was!

Using an amalgamation of Ina’s, Thomas’ and Jessica’s recipes, I somehow did it. And now I feel like a legitimate, don’t-mess-with-me-I’m-classy-like-Ina-Garten cook. Because how can you call yourself a cook without at least once roasting a golden bird with a skin so salty and crunchy that you must peel it off and eat it all immediately? Not like that happened or anything…

(2) Also, I said no to something today!

(3) Three things I currently can’t live without: candy cane Hershey kisses, karamelized Savi Seeds and Dark Chocolate Peppermint Pretzel Crisps…in that order.

(4) My birthday is on Wednesday. I will be 27. And no, I have no idea what I’m doing with my life.

(5) Thank you to everyone who voted for their favorite headshot! My self-esteem has been successfully inflated enough to last me for at least another couple of weeks.

(6) The wonderful people over at Chobani recently featured our Haiti fundraiser on their blog as part of their new foundation called “Shepherd’s Gift,” which focuses on shining a light on those who are giving back to the community. (7) Tonight, I created geniusness: sweet potato, roasted chicken (see above), buffalo hummus (see here), blue cheese crumbles, hot sauce + celery #bestdinnerever

(8) Christmas…in 10 days…really?!?!

You look adorable. Just saying.

And after Nick and I bought a rotisserie chicken last night, I turned to him and said, “I totally think I could and should roast a whole chicken by myself. For the first time ever.” This is why we are the same, and it makes me happy. You also just gave me the extra boost of confidence that I might actually be able to pull it off!

Wait…10 days? I just had a little panic attack. I haven’t shopped AT ALL yet…oh heavens, now I feel like crying.

Except I won’t because your headshot is so dang good looking.

I’ve been sick off and on this week too…it sucks! Glad you’ve been more productive than I have! (I was being held down on a couch by a large orange tabby and sleeping a lot) I even missed the whole “vote on a headshot” business! Looking back, I like the one most people picked! So yay!

If I’m feeling more human again, I’m going to write on my own blog and pimp your fundraising efforts to the 10 people who read my blog! :)

This year – in an unprecedented show of preparedness – I was done Xmas shopping before Thanksgiving. That never happens! Usually with 10 days left, that’s when I start thinking about starting to shop. Then I would wait a few more days. ;)

Awesome job on roasting the chicken! Next up – making your own chicken stock from aforementioned chicken. It’s WAY easier than you’d think and I have an addictive chicken soup recipe. Let me know if you’re interested.

I bought those chocolate covered pretzels for my husbands stocking. Then I ate the whole bag – 3 pretzels. 4 pretzels in a serving?! Pshhh!

I love roasted chicken. I make Wolfgang Puck’s chicken. It’s SO moist and tender! You stick rosemary and garlic under the skin and make a wonderful gravy with the drippings. Yum!!!! And, while you may be a much healthier version of Ina Garten, you are nothing like her in charity since you would NEVER deny a child in the “Make a Wish Foundation” (TWICE) to go see him and cook with him… That’s all I’m sayin!

knowing how to roast a chicken is probably one of the most useful kitchen-related things i’ve learned ever. best skill fo’ sho. i recently used strings and stuff. that was interesting.

i like number 2, even though i wanted 4. still a very bad-ass-friendly-can-do kinda photo.
