First things first…a big happy birthday goes out to both the King (Martin Luther that is! And three days late…his actually b-day is the 15th) as well as our girl Kacy!

Thanks to Martin Luther King Jr., I had the day off! Although let’s be real, that is the least of his accomplishments :).

I decided to enjoy the morning by whipping up a batch of Kath’s Whole Wheat Yogurt Pancakes

Added to the mix: cinnamon and bananas! These were excellent – yet another winning recipe from Ms. Real Food herself! Topped with a smidge of peanut butter and a drizzle of maple syrup, these were the perfect way to enjoy a lazy Monday morning…

Thankfully, I have two more servings waiting for me in the fridge.

This morning, the productivity train kept on the tracks, and I went to a local coffee shop where I hammered out two solid hours of writing.  Unfortunately, two crotchety old men decided to sit next to me and scream their conversation to each other.  I vented my frustration on GChat to my friend Jess, which went a lil’ something like this…

me: i am going to <bleep> kill the two old crochety men who are talking so loud and crabbing about next to me at the coffeeshop.
Jess: hahaha
aw nice
me: GAH!
i just had to get that out
thank you
Jess: no problemo
me: HOW ARE YOU?!?!
Jess: im awesome!
how are you?
me: i’m good…minus the two <bleep> next to me

That is verbatim word for word, FYI.

Lunch TOTALLY redeemed my attitude.  This junk salad of love was so full of unexpected flavors and textures, I loved it!

  • two large handfuls spinach
  • 1/2 cup carrot sticks
  • 1/4 cup garbanzos
  • 2 tbsp. curry-roasted cashews
  • 1/2 diced avocado
  • 1/4 cup cilantro pesto hummus
  • Amy’s California burger
  • salsa
  • 5 Ak-Mak crackers

Dessert was per a recommendation Katharina gave me a loooongggg time ago…

Besides the fact that the color kind of skeeved me out (flourescent orange isn’t a natural shade…perhaps I am wrong, maybe Vanessa Minnilo knows the answer to this one?), the chunks of actual carrot cake in this were DIVINE!

I think the fact I ate it with a Chuck E. Cheese spoon may have made it taste even better.  Just sayin’…

Sometime in the afternoon, I munched on a delectable orange

…which are AMAZING right now!  Seriously, go stock up on oranges now!

This afternoon, I hit up the movie A Single Man with my girl Ilsa.  This movie was heartbreakingly beautiful.  I definitely recommend it.  Colin Firth does an absolutely amazing job…one of those movies where you come out of it with lots of good conversation and thoughts.

Unfortunately, I forgot my cam to bring to dinner…oops!

Alright kiddos, it’s back to work for me tomorrow, and I am thinking an early bedtime is just the thing to start Tuesday off right.  And yes, 8:30pm totally counts as an early bedtime.

What is a fruit or veggie you are totally obsessed with right now? ORANGES!  Sooooo gooooodddd!

That ice cream rocks! I found it at a local natural store over the summer and reviewed it–sooo good. It was like my beloved carrot juice in icey form with big hunk o’ gingersnaps. Gah. you’re making me want it again

I’m all about apples – from when apple season starts here (late August) and I can start getting boxes of apples from up in the hills, I love me some nice crispy fresh apples. I mix it up for some variety… but there’s nothing like that daily crunch :-)

I am all over the ice cream. 1) It’s not actually cream, which creeps me out 2) it’s carrot cake, which is probably my third favourite “sweet” flavour ever (vanilla and chocolate being first, obvi)

Ahaha, I just laughed aloud at your Vanessa Minnilo/neon orange joke. Hooray for junk salad success, too!

Cleaning my house was my highlight. Plus, doing a puzzle which was so relaxing.

I am also obsessed with oranges right now (or tangelos to be more specific) – and bananas have been a major hit in my kitchen for a few weeks. Very unusual because I claim to hate bananas.
