in breakfast,dinner,lunch

  • Laundry
  • Grocery shopping
  • Target
  • Buy wedding presents
  • Clean apartment
  • Apply for a part-time/weekend job
  • Organize, organize, organize!
  • Eat lunch
  • 5pm Pilates class

So, maybe when it comes to to-do lists, I am an underachiever.  However, I know for a fact I am a breakfast overachiever. The proof is in the pics my friends, or in Pumpkin Pie Oatmeal.

1/3 cup oats
1/3 cup water + 1/3 cup skim milk
lots of cinnamon
pinch of nutmeg +  ginger
1/2 cup pumpkin
1 tbsp. maple syrup
1 small box raisins
1 spoonful Cinnamon Raisin Swirl PB

Throughout the day, I chose just to achieve (not under- nor over-) by eating mini-meal style.

1 cup Chobani Plain Greek yog
1 crumbled Whole Berry Blast Pro Bar
3/4 cup strawberries

I swear there is Greek yog somewhere in there.

My other mini-meals included a jumbo coffee + 2% milk (twas’ needed today) and some Chex Mix alongside a perfect, slightly green banana.  That’s how I like em’ best.

For dinner, I overachieved once again.

mixed greens
1/2 purple pepper
3/4 cup cherry tomatoes
1 grated carrot
1/2 cup black beans
drizzle of BBQ sauce
grilled pepperjack cheese sammie on spelt bread

Dear pepperjack grilled cheese,

Why must you achieve so highly as to outshine the rest of my meal?  I bow down to you in thanks.

Love, Me

I continued the overachieving by heading to do laundry right after work. Check. Little do you know that while blogging, I am also buying wedding gifts on honeymoon registries. Check. Who knows? I may even apply for that part-time job online after I hit ‘Publish.’ Almost check.

Who am I kidding? This is what I am really going to do.

Why did I read this right before lunch? Before I read it, carrot salad wrap sounded good. Now I can’t stop thinking about hot, melty cheese!

Sarah @ The Foodie Diaries September 21, 2009 at 7:20 pm

OMG I need pumpkin ASAP. Seriously. I just drooled looking at your oats.

Jess September 21, 2009 at 7:38 pm

Love your list :D

Fabulous breakfast! Love your greek yogurt mini meal as well!

Kristin @ Iowa Girl Eats September 21, 2009 at 7:46 pm

Jenna September 21, 2009 at 7:55 pm

I love the mini-meals! I would much rather have a bunch of smaller meals throughout the day than three larger ones.

Your oats=nummyyy!

April September 21, 2009 at 8:00 pm

Beautiful oats and beautiful salads my friend!!

Kathleen September 21, 2009 at 8:06 pm

Your to-do list looks exactly like mine! Ugh, NEED more hours in the day, though unfortunately I would probably still sit aimlessly on my butt haha.
Oh, and pepperjack cheese? SO DELICIOUS! Nice choice.

Lizzy September 21, 2009 at 8:18 pm

in my eyes i think you achieved alot! talk about multitasking! :) Get it girl! and girl that salad, for reals amazing!

Andrea@WellnessNotes September 21, 2009 at 8:35 pm

I’ve been meaning to make pumpkin oats for a while now… Your pumpkin pie oats look sooo good! I may just have to “steal” the recipe… ;)

Love your to-do lists! Hubby is big on to-do lists; me not so much… I never get enough stuff done, so I don’t see the point… You are doing great! :)

Maggie September 21, 2009 at 8:40 pm

I love your meals :)

To-do lists help me a lot to get everything done. I need to make them more often.

Leianna September 21, 2009 at 9:04 pm

That whole berry blast probar is amazing isn’t it?
Your dinner looks amazing!
Part-time weekend job? Don’t over stress yourself, girl!

Katie September 21, 2009 at 9:14 pm

I really want that salad and that book. Happy Monday! :-)

YUM. I love me some pumpkin oats! I highly recommend making them in the crock pot:)

Katharina September 21, 2009 at 11:02 pm

Lol your mini-meals are going to look like what I’m going to be eating all day tomorrow. I have 2 critiques and class from 9-5 then catching up with more homework… BUT I’m reading people’s blogs ahaha. I feel like if I miss a day I have soo much to catch up on!

p.s. your oats sound muy delicioso!

p.s.s. I suggest using apple butter.. pumpkin butter (you get the picture) with el pepper jack grilled cheese sandwich!

Nicole September 22, 2009 at 12:57 am

I seriously need to get pumpkin in my house!!! Fall is here already!!! That salad at the end looked amazing!!

Susan September 22, 2009 at 5:36 am

Breakfast is the only thing that should be overachieved anyways ;)

brandi September 22, 2009 at 8:10 am

eh, to do lists are NEVER done :)

I need to get some pumpkin, stat! and pepperjack. that sounds amazing.

Katie September 22, 2009 at 8:15 am

AH, I’m so bad with to-do lists, too! I always put little things like “paint toenails” and “sweep floor while toenails are drying” on them so I can cross them off and feel accomplished.

I’m going to spend the day reading, too! Once I drag myself off the computer…

Morgan September 22, 2009 at 8:47 am

Such an amazing book! I couldn’t put it down.
Your oats look yummy!

Matt September 22, 2009 at 9:04 am

I never get those frickin’ lists completed either. I don’t like them. The underachievement sounds best to me :).

Whit September 22, 2009 at 9:08 am

Hey, looks like you got a lot done to me! OVER ACHEIVER! (what with the second job applying and all.)

K September 22, 2009 at 9:23 am

That’s why all of my To Do list start with really stupid, simple things (i.e. make to do list, brush teeth, etc.). That way I can cross off more :)

Pepper jack grilled cheese is the best! All other cheeses are so inferior it’s not worth our time!

Low September 22, 2009 at 9:40 am

Pepperjack grilled cheese?! Oh yes, please! Sounds so good right now with a bowl of mater soup.

You are the definition of overachiever my dear, and I love you for it!

Angharad (Eating for England) September 22, 2009 at 9:49 am

To-do lists aren’t actually meant to get completed are they?! Shite. I need to work on my skillz.
Breakfast does look glorious. I need a yogurt/granola bar bowl of yum soon.
And some coffee. Loooots of coffee.

Brooke September 22, 2009 at 10:27 am

Why did I only discover the wonderfulness of pepperjack this summer? It is absolutely breathtaking when melted and with bread.

YAY mini meals! I love mini mealing my way through the way. The only greatest minimeal/snack you are missing would be a HUGEASS apple with an assortment of nut butters :D

LovE You sUga

Emily (The Experimentarian) September 22, 2009 at 10:30 am

Um Holly, that looks AMAZING! Thanks for your sweet comments on my blog lately–I really appreciate you stopping by :) Hope you have a great day! xoxo

insideiamdancing September 22, 2009 at 10:32 am

Pumpkin oats rock! Mashed banana makes a delicious addition…and a crumbled graham cracker on top can never be wrong.

If reading a book in the evening is underacheiving, where does that put my endless hours of Facebook quizes? :P

Sarah (Finding My Balance) September 22, 2009 at 11:45 am

Would you like to come to Russia and be my own personal chef? Maybe? Please?

Mimi (Damn the Freshman 15) September 22, 2009 at 12:04 pm

Pepper jack cheese PWNS ALL. They can keep their pussy mozzarella and provolone, gimme some FLAVOR.

I love tormenting the faux health chicks at my school who think cheese is a Satanic abomination. They don’t get why I would possibly tell the Wahoo Fish Taco people to leave off the tortilla strips but keep the cheese on the their awesome fish salad.

I’m actually going to be trying ProBar soon! I’ll let you know what I think!

Faith September 22, 2009 at 1:16 pm

Your oats look incredible as usual! How is it that even your raisins look better than mine?! :)

Erica September 22, 2009 at 2:05 pm

SO happy that pumpkin is widely available again! I bought big ole’ can of it. Your bfast and dinner both look fabulous to me. I may make a mexicany salad for din din. Can’t decide!

Erin September 22, 2009 at 2:51 pm

Pepperjack cheese slams it. SLAMS it! Love your ode to it.

Cindy September 22, 2009 at 3:04 pm

Christina September 22, 2009 at 6:10 pm

Jenny September 22, 2009 at 7:08 pm

pshhhhhh pumpkin oats are so much more important than applying for jobs or wedding gifts anyways, way to keep your priorities straight bugaboo ;)

love you like no otha!

Meredith (Pursuing Balance) September 22, 2009 at 7:18 pm

Haha, I would do that too. I love reading!
I read in Self magazine once that you should only have like 3 things on your to do list a day (outside of your job, I mean).

Allison (Eat Clean Live Green) September 22, 2009 at 7:44 pm

Your dinner looks amazing! I loved The Time Travellers Wife :)

Michal September 23, 2009 at 2:40 pm
