So, maybe when it comes to to-do lists, I am an underachiever. However, I know for a fact I am a breakfast overachiever. The proof is in the pics my friends, or in Pumpkin Pie Oatmeal.
1/3 cup oats
1/3 cup water + 1/3 cup skim milk
lots of cinnamon
pinch of nutmeg + ginger
1/2 cup pumpkin
1 tbsp. maple syrup
1 small box raisins
1 spoonful Cinnamon Raisin Swirl PB


Glorious.
Throughout the day, I chose just to achieve (not under- nor over-) by eating mini-meal style.
1 cup Chobani Plain Greek yog
1 crumbled Whole Berry Blast Pro Bar
3/4 cup strawberries


I swear there is Greek yog somewhere in there.
My other mini-meals included a jumbo coffee + 2% milk (twas’ needed today) and some Chex Mix alongside a perfect, slightly green banana. That’s how I like em’ best.
For dinner, I overachieved once again.
mixed greens
1/2 purple pepper
3/4 cup cherry tomatoes
1 grated carrot
1/2 cup black beans
drizzle of BBQ sauce
grilled pepperjack cheese sammie on spelt bread

Dear pepperjack grilled cheese,
Why must you achieve so highly as to outshine the rest of my meal? I bow down to you in thanks.

I continued the overachieving by heading to do laundry right after work. Check. Little do you know that while blogging, I am also buying wedding gifts on honeymoon registries. Check. Who knows? I may even apply for that part-time job online after I hit ‘Publish.’ Almost check.
Who am I kidding? This is what I am really going to do.

Why did I read this right before lunch? Before I read it, carrot salad wrap sounded good. Now I can’t stop thinking about hot, melty cheese!

Lol your mini-meals are going to look like what I’m going to be eating all day tomorrow. I have 2 critiques and class from 9-5 then catching up with more homework… BUT I’m reading people’s blogs ahaha. I feel like if I miss a day I have soo much to catch up on!

AH, I’m so bad with to-do lists, too! I always put little things like “paint toenails” and “sweep floor while toenails are drying” on them so I can cross them off and feel accomplished.

That’s why all of my To Do list start with really stupid, simple things (i.e. make to do list, brush teeth, etc.). That way I can cross off more :)

Why did I only discover the wonderfulness of pepperjack this summer? It is absolutely breathtaking when melted and with bread.
YAY mini meals! I love mini mealing my way through the way. The only greatest minimeal/snack you are missing would be a HUGEASS apple with an assortment of nut butters :D

Pumpkin oats rock! Mashed banana makes a delicious addition…and a crumbled graham cracker on top can never be wrong.

I love tormenting the faux health chicks at my school who think cheese is a Satanic abomination. They don’t get why I would possibly tell the Wahoo Fish Taco people to leave off the tortilla strips but keep the cheese on the their awesome fish salad.

I was reading that book in the summer right before i got back to schooll and then school work started and i had to stop….i look at it everyday wishing i could finish so i could see the movie! maybe one of these nights?
