Without a doubt, Tay had it right when she decided to whisk an egg in her oatmeal.  Uber-creamy, rich and decadent, this bowl of Savoury Oats (spelled British-style, because it looks posh) was hella good.

1/2 cup oats
1/2 cup water + 1/2 cup org. skim milk
1 egg (whisked in as it was boiling)
2 tbsp. grated pepperjack cheese
1 handful spinach
pinch of salt
a couple tbsp. salsa
1 runny egg

Exceptionally sweet, kind and helpful – that’s what all you reader have been these past two days.

Emo.  That is how I am dressed today.  Minus the heavy eyeliner, plus the scowl.

Kosi would be a really good name for a restaurant if there wasn’t another restaurant already called Cosi that makes killer salads, including their Signature Salad – mixed greens, red grapes, pears, pistachios, dried cranberries gorgonzola + reduced-fat sherry shallot vinaigrette.  Not as killer as their flatbread however.  It’s a carb lover’s dream.

Este fin de semana, yo tengo nada para hacer! Translated: This weekend, I have nothing to do (except for perhaps practicing my Spanish so I am ready for my review class which starts in almost one week)!

Nothing.  That’s what I thought was in my fridge for dinner as I was walking home.  However, when I arrived and looked in my fridge, I found all the fixins’ for the PERFECT snack plate

celery + carrots
dipped in salsa and peanut butter
which could also be dipped in apples
topped with apple pie spice
and also dunked pumpkin hummus
with some multigrain pita chips

Dark chocolate + peppermint bark squares are currently being snarfed down like its my job.  What can I say?  Mama needs some fuel to attack some laundry, freelance writing and (possibly) a workout.








What does that spell?  WEEKEND!

Love the savory oats idea. I keep hearing that egg is an excellent addition but I am afraid to try. Guess I need to put this fear aside, right? :)

Eggs in oatmeal IS AWESOME. And it doesn’t even have to be savory–I’ve had wonderful results when I’ve put them (sprinkled with salt) in a bowl of oats that I’ve mixed unsweetened cocoa and stevia into.

Definitely an egg in the oatmeal makes it. Especially if the yolk is runny…yummmmm.

Also, a snack plate for dinner on a Friday night, I’m not sure there is anything better. Honestly. Last night I ate a full dinner and THEN ate a snack plate just ’cause I wanted. :-) Happy Weekend, girl.

Love your Emo-ness and Cosi flatbread makes me all hot and bothered. At the one by my house they leave their “crusts” they don’t use in this big bowl and you can take as many as you’d like….just sayin’, you know, not that I’d ever throw a handful in my purse.

Ahh I love this. WEEKEND IS RIGHTTTTT. Except mine’s been super mellow since everyone’s out of town! Meh, why do they make us come back to school for three days and then give us a break?! hahahha…..

Since it’s been mellow though, the girls who ARE here are all going to see AVATAR in a few!
