Will Do(ing).

I know I keep saying this, but work was crazy today.

However, it was crazy because I was busy getting everything done before I leave for Charlotte tomorrow morning!  Literally, the only thing I remembered to photograph today was this beauty…

Una ensalada monstruosa from one of my fave cafes in Madison, containing:

  • spinach
  • tabbouli
  • cucumbers
  • carrots
  • green peppers
  • banana peppers
  • cottage cheese
  • garbanzos
  • hardboiled egg
  • beets
  • broccoli salad
  • sunflower seeds
  • cucumber yogurt dressing

And of course, a glorious Sun Bun to go along with it all.

Since my blogging will be sparse over the next five days while I live it up Charlotte-style, I thought now would be the perfect time to update y’all on my Things I Will Do in 2010 list.  Here we go, here we go, kick it!

(1) Pay off my credit cards.

I am one month away from paying off CC#1 and about six months away from paying off CC#2!  Woowoo!

(2) Run two 1/2 marathons at a sub-1:50 pace.

TBD.

(3) Travel somewhere.

Check!  I’m off to Charlotte this weekend and then, if all goes according to plan, Banff, British Columbia (Canada – never been) in June!  I don’t want to be greedy, but if I can smush one more trip before 2011, I will be a VERY happy camper :).

(4) Put an additional $2000 in savings.

Let’s just say, I am about 1/4 of the way there.

(5) Study Spanish.

Check!  Classes started last Tuesday, yo!

(6) Write a story + get it published.

I haven’t thought about this one once.  Must. Get. On. That.

(7) Cook one new recipe a week.

I have done rather well with this one!
Week One: Spicy Thai Tempeh with Cashews
Week Two:
Butternut Squash Casserole + Pumpkin Pie Hummus
Week Three: Sweet Potato + Parsnip Pancakes
Week Four: Pumpkin Pancakes

And with that, I’m off to watch Lost (last season premiere!!!). See y’all in Charlotte :)!

I think you forgot to mention the beets in your glorious salad! I only noticed because I LOVE beets, so I zeroed in on them right away! Have a wonderful trip to Charlotte :)

Fantastic goals- I love how doable they are– Canada rocks, you’ll love it, Banff also kicks ass, though the coast can’t really be beat- get to Vancouver if you can- it’s awesome

Oops!! Banff is in Aberta, and so very beautiful!! But make sure you’re going to Alberta and not British Columbia :P Have fun in Charlotte!

Ooh! Ooh! Hope you are having safe travels right now!! I’m an old lady and passed out after the first hour of Lost. TV shows go ridiculously late here in the Atlantic time zone (and by late I mean 10 pm :P )

Congratulations on being a bad ass with your goals! So sorry I didn’t get a chance to call you back last weekend – was in Bigfork, MN (north woods) and this week is the busiest week of the year (actually) for me at work. well that = friend fail.
